Description
This paleo Christmas bark is the EASIEST recipe ever & such a fun addition to a holiday cookie tray! It has the perfect blend of sweet, salty, nutty flavors with bursts of dried fruit that makes this Christmas bark irresistible.
Ingredients
Chocolate Base
- 2 (100g) 100% Unsweetened Dark Chocolate
- 1 tbsp. Coconut Oil
- (Optional) Coconut Sugar or Monk Fruit Sweetener to taste
Paleo CaramelĀ
- 1/3 cup cashew butter
- 1/3 cup honey
- 1/4 cup coconut oil
Add-in’sĀ
- 1/2 cup sliced almonds
- 1/4 cup goji berries
- 1/4 cup dried wild blueberries
- Sea salt to taste
Instructions
- Melt the chocolate and coconut oil together over medium heat in a stovetop pan. Stir constantly until fully melted (temp. should be 110F-115F).
- Carefully pour the melted chocolate on to a cookie sheet lined with wax paper. Immediately top the warm chocolate with half of the sliced almonds, goji berries, and dried blueberries. Place in the freezer for at least 30 minutes.
- As the chocolate layer chills, prepare the Paleo Caramel Sauce. Recipe linked HERE.
- Pour about 2/3 cup of the warm (but not hot) caramel sauce over the cold chocolate layer until it is evenly covered. Immediately top the caramel with the rest of the sliced almonds, goji berries, dried wild blueberries, and sea salt.
- Freeze for at least 1 hour before breaking the Christmas Bark into about 24 pieces. Enjoy!
