Description

A healthier light and fluffy chocolate chip muffin ready in seconds! This microwave muffin recipe is so simple to make and has enough protein to keep me energized. Paleo, Grain-free, Refined-sugar-free, Gluten-free, Dairy-free, Soy-free, High protein. 


Ingredients

Scale
  • 1/4c almond flour
  • 1 tbsp. coconut flour
  • 1 scoop (12 grams) unflavored collagen peptides
  • 1/2 tsp. baking powder
  • 1/4 tsp. monk fruit sweetener
  • 1/8 tsp. salt
  • 1/8 tsp. cinnamon
  • 1 egg
  • 1/4 cup water
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. apple cider vinegar 
  • 1 tbsp paleo mini dark chocolate chips
  • 1 tbsp. cocoa nibs

Instructions

  1. In a microwave safe bowl, combine the almond flour, coconut flour, collagen, baking powder, monk fruit, salt, and cinnamon. Stir well. 
  2. Mix in the egg, water, vanilla, and ACV.
  3. Stir in the chocolate chips and cocoa nibs.
  4. Microwave on high for 90 seconds or until the center appears to be “set”.  

Notes

Microwave strength may vary, so add time as needed to cook through!
