A healthier light and fluffy chocolate chip muffin ready in seconds! This microwave muffin recipe is so simple to make and has enough protein to keep me energized. Paleo, Grain-free, Refined-sugar-free, Gluten-free, Dairy-free, Soy-free, High protein.
Ingredients
- 1/4c almond flour
- 1 tbsp. coconut flour
- 1 scoop (12 grams) unflavored collagen peptides
- 1/2 tsp. baking powder
- 1/4 tsp. monk fruit sweetener
- 1/8 tsp. salt
- 1/8 tsp. cinnamon
- 1 egg
- 1/4 cup water
- 1/2 tsp. pure vanilla extract
- 1/2 tsp. apple cider vinegar
- 1 tbsp paleo mini dark chocolate chips
- 1 tbsp. cocoa nibs
Instructions
- In a microwave safe bowl, combine the almond flour, coconut flour, collagen, baking powder, monk fruit, salt, and cinnamon. Stir well.
- Mix in the egg, water, vanilla, and ACV.
- Stir in the chocolate chips and cocoa nibs.
- Microwave on high for 90 seconds or until the center appears to be “set”.
