I cannot stop making different variation of single-serve microwave muffins. If you know me irl, you would realize that some form of microwave muffin is a part of my daily routine at this point. One of the many things my college education has taught me is that the wonders of the microwave should not be overlooked. There’s sooo many amazing, healthy recipes that can be ready in (literally) a minute!

This gut healthy single-serve microwave muffin recipe is totally grain-free, sugar-free, and packed with protein to keep me full before long days of classes and work. A true life-saver. Especially if you don’t have time or space for a full batch of muffins (or if you’re constantly wanting to switch up the flavor) this recipe is right up your ally!
What is the SCD? Why Paleo?
Hiii hello what’s up if you’re new! I was diagnosed with severe ulcerative colitis last year, which lead me to start taking drastic diet/lifestyle changes to live like a normal human again!
One of these drastic lifestyle changes was following the Specific Carbohydrate Diet (SCD) strictly for about 9 months. Although I’ve been able to incorporate a few foods back in that aren’t “allowed” on the SCD since my symptoms have cleared up, I still mostly follow the grain-free, gluten-free, refined-sugar-free guidelines! Staying away from these processed carbohydrates ensures that the “bad” bacteria in your gut aren’t being fed, which is a must if you have IBD.
At first glance, following the SCD sounded like my worst nightmare last year. I will be the first to admit that I have the BIGGEST sweet tooth. I’m also a runner and muffin/bagel/carb lover. So developing a grain-free/SCD friendly microwave muffin recipe was one of the first things I did. It’s also one of the very first recipes I put up on the blog last year! Wow, time flies.
Ever since this first recipe, I’ve made tons of slight changes and variations over the past couple months… including this one. Since I started re-incorporating unsweetened, dairy-free chocolate back into my life, it’s been hard for me to include it in recipes! This chocolate chip muffin recipe has been long overdue!

How to Make a Single-Serve Muffin:
Step 1: Mix the dry ingredients together.
Step 2: Stir in the egg, water, vanilla, and ACV. Add the dark chocolate chips & cocoa nibs.
Step 3: Microwave for 90 seconds & add toppings (I used greek yogurt, pepitas, goji berries, and more cocoa nibs).

Ingredients
- 1/4c almond flour
- 1 tbsp. coconut flour
- 1 scoop (12 grams) unflavored collagen peptides
- 1/2 tsp. baking powder
- 1/4 tsp. monk fruit sweetener
- 1/8 tsp. salt
- 1/8 tsp. cinnamon
- 1 egg
- 1/4 cup water
- 1/2 tsp. pure vanilla extract
- 1/2 tsp. apple cider vinegar
- 1 tbsp paleo mini dark chocolate chips
- 1 tbsp. cocoa nibs
Instructions
- In a microwave safe bowl, combine the almond flour, coconut flour, collagen, baking powder, monk fruit, salt, and cinnamon. Stir well.
- Mix in the egg, water, vanilla, and ACV.
- Stir in the chocolate chips and cocoa nibs.
- Microwave on high for 90 seconds or until the center appears to be “set”.

Microwave strength may vary, so add time as needed to cook through!
