Easy & Healthy Walnut Flour Cookies!
Banana and walnut are two flavors that are just made for each other! So whenever I have ripe bananas on hand, there’s a 98% chance that I’m whipping out my walnut flour to bake fun treats.
These banana walnut cookies were a spin-off on my favorite healthy paleo banana walnut muffin recipe (one of the very first recipes I posted on my blog)! They are SO easy to make & made with healthy, nourishing ingredients that I can feel food about eating for breakfast too.
They are full of healthy fats from walnuts & eggs. To make it even better, the bananas are the only source of natural sugar in this cookie recipe! Whenever I eat high-sugar desserts, I always end up feeling “hangry” 2 seconds later… so these are a life-saver!
Sooo long story short, I think it’s totally acceptable to eat these cookie bites for breakfast too… no judgement here!
How to Make Paleo Banana Cookies
Step 1: Combine all of the dry ingredients in a large bowl: the walnut flour, coconut flour, baking powder, cinnamon, & salt. Stir well!
Step 2: Combine the bananas, eggs, butter, & vanilla. Beat with an electric mixer until well combined.
Step 3: Add the banana mixer to the walnut flour mixture. Mix with an electric mixer until a cookie dough forms. Add in the dark chocolate chips and stir well.
Step 4: Use a cookie scooper to scoop out the cookie dough on to a lightly-greased baking sheet.
Step 5: Bake at 350F for 12 minutes and enjoy warm! Store leftover cookies in the refrigerator for up to 5 days.

Ingredients
- 1 cup walnut flour
- 1/2 cup coconut flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup butter, melted
- 1 tsp. vanilla
- 1 tsp. apple cider vinegar
- 1/4 cup almond milk
- 1/3 cup mini dark chocolate chips
Instructions
- Preheat the oven to 350F.
- In a large mixing bowl, combine the walnut flour, coconut flour, cinnamon, baking powder, and salt. Stir well.
- In another bowl, beat together the mashed bananas, eggs, butter, almond milk, vanilla, and apple cider vinegar with an electric mixer.
- Add the banana mixture to the flour mixture and beat together until well combined. Stir in the dark chocolate chips.
- Scoop out the dough with a cookie scoop on to a lightly greased cookie sheet.
