Description

Delicious moist and fluffy paleo banana cake, made healthy enough for breakfast! SCD-friendly, Paleo, Grain-free, Gluten-Free, Refined-Sugar-Free. 


Ingredients

Scale
  • 3 large ripe bananas, pureed or mashed
  • 3 eggs
  • 2 cups almond flour
  • 2 tsp. pure vanilla extract
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. Himalayan pink salt

(Optional) Toppings: 


Instructions

  1. Preheat the oven to 350F and lightly grease a 9×9″ glass baking tray. 
  2. Combine the almond flour, cinnamon, baking powder, baking soda, pink salt. Stir well. 
  3. Blend the bananas in a food processor until smooth. 
  4. Add the pureed bananas, eggs, and vanilla extract to the flour mixture. Beat well with an electric mixer until a smooth batter forms. 
  5. Transfer the cake batter into the greased baking tray and smooth the surface. Sprinkle the toppings evenly over the top of the batter before baking. 
  6. Bake for 30 minutes, until a toothpick comes out clean from the center.
