Description
Delicious moist and fluffy paleo banana cake, made healthy enough for breakfast! SCD-friendly, Paleo, Grain-free, Gluten-Free, Refined-Sugar-Free.
Ingredients
- 3 large ripe bananas, pureed or mashed
- 3 eggs
- 2 cups almond flour
- 2 tsp. pure vanilla extract
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. Himalayan pink salt
(Optional) Toppings:
- Enjoy Life chocolate chips
- raw pumpkin seeds (pepitas)
Instructions
- Preheat the oven to 350F and lightly grease a 9×9″ glass baking tray.
- Combine the almond flour, cinnamon, baking powder, baking soda, pink salt. Stir well.
- Blend the bananas in a food processor until smooth.
- Add the pureed bananas, eggs, and vanilla extract to the flour mixture. Beat well with an electric mixer until a smooth batter forms.
- Transfer the cake batter into the greased baking tray and smooth the surface. Sprinkle the toppings evenly over the top of the batter before baking.
- Bake for 30 minutes, until a toothpick comes out clean from the center.
