Get your warm mug of almond milk coffee, a mixing bowl, all of your best spotted bananas, a killer acoustic playlist and buckle up. Your Saturday morning breakfast situation is about to get crazyyy. Like we’re talking cake for breakfast kind of crazy.
A SCD-Friendly Banana Cake Recipe!
If you’ve been following along my ulcerative colitis journey, you’ll know that the Specific Carbohydrate Diet (SCD) completely changed my life. By following this diet, I was able to put most of my biggest symptoms into a complete remission!
Buuuut I’m not going to lie: eating “healthy” 24/7 just isn’t super fun. There’s a time and place for eggs and seeds and veggies, but that just wasn’t going to cut it for a girl with a massive sweet tooth…
So for the past year, my heart and soul have been in re-creating SCD compliant versions of all of my old favorite foods. Two of which include banana bread & cake.
So why not just mash them both together right?!
And since banana bread is a totally acceptable breakfast, I think I can justify this as a “breakfast cake”.
A Healthy Breakfast Idea
When cake = healthy breakfast, I know I’ve peaked. Coming from someone who just isn’t a savory breakfast fan, this breakfast idea is a game-changer. I think it’s pretty well known that eggs, avocado, and veggies is touted to be a stereotypical healthy breakfast, but that just never sounds good to me in the morning. Especially if I can’t even have my avocado on toast…
I need my warm mug of almond milk coffee with something sweet. Cue breakfast cake.
Like I said before, this cake isn’t your average cake if you know what I mean * wink wink*. Although this recipe is just as sweet and moist as a traditional cake, it packs a nutrition punch as well.
This special cake recipe calls for wholesome, nourishing ingredients- pretty much all of the things I would want to kickstart my day with!
On the days where I don’t have time or energy to bake a cake (or have any leftover squares stashed in my freezer), there’s a very good chance I’m making my favorite SCD banana bread pancakes. Some may call it an obsession, others call it love.

Either way, this banana bread cake is made with most of the same simple and healthy ingredients that are in my banana pancake recipe- which I’ve been eating almost every day this past year!
What You Need:
Bananas: I feel like they get a bad rap in our Keto-driven diet culture, but in my opinion fruit is like nature’s nourishing gift to the world! Bananas are a great anti-inflammatory, energizing carb source- which I need desperately as an active 20-year-old woman following a paleo-based diet. They’re also my go-to SCD-legal natural sweetener, along with honey of course!
Almond flour: I’ve said this before and I’ll say it again. If there is any truth behind the phrase “you are what you eat”, I’ll most likely start to morph into a nut very soon. Probably an almond, if we have to get to the specifics. Almond flour is such a versatile, easy alternative flour to bake with. I think I end up eating it in some shape or form every single day- it’s a tried and true pantry staple of mine!
Eggs: This ingredient seems obvious when it comes to baking, but I just want to mention how much of a nutrient jackpot they are. Not only are they anti-inflammatory, but they are also a complete protein source and full of healthy fats. I’m convinced that the combination of eggs and almond flour in this recipe is the secret to keeping me full for HOURS.
Other pantry staples: Cinnamon, pure vanilla extract, baking powder, baking soda, and Himalayan pink salt.
Fun toppings: I love to add paleo chocolate chips (I use Enjoy Life, but whatever you have on hand works) along with nuts or seeds. My favorite combination at the moment has been chocolate chips and raw pumpkin seeds, but you can’t go wrong with dried fruit or walnuts!
*Note: chocolate is not SCD-legal, so use caution if you are strictly following the SCD!
How to Make Banana Breakfast Cake:
Step 1: Combine the almond flour, Cinnamon, baking powder, baking soda, and pink salt in a mixing bowl. Stir well.
Step 2: Add in the eggs, pureed bananas, and vanilla. Beat well with an electric hand mixer until a smooth batter forms.
Step 3: Pour the batter into a lightly greased 9×9″ baking tray. Sprinkle your toppings over the surface of the batter before baking.
Step 4: Bake for 30 minutes at 350F. Let cool completely before slicing!
I recommend storing any leftover pieces in the freezer with air-tight containers. They last a long time (2+ months) and still taste delicious thawed or warmed up for busy weeks!

Description
Delicious moist and fluffy paleo banana cake, made healthy enough for breakfast! SCD-friendly, Paleo, Grain-free, Gluten-Free, Refined-Sugar-Free.
Ingredients
- 3 large ripe bananas, pureed or mashed
- 3 eggs
- 2 cups almond flour
- 2 tsp. pure vanilla extract
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. Himalayan pink salt
(Optional) Toppings:
- Enjoy Life chocolate chips
- raw pumpkin seeds (pepitas)
Instructions
- Preheat the oven to 350F and lightly grease a 9×9″ glass baking tray.
- Combine the almond flour, cinnamon, baking powder, baking soda, pink salt. Stir well.
- Blend the bananas in a food processor until smooth.
- Add the pureed bananas, eggs, and vanilla extract to the flour mixture. Beat well with an electric mixer until a smooth batter forms.
- Transfer the cake batter into the greased baking tray and smooth the surface. Sprinkle the toppings evenly over the top of the batter before baking.
- Bake for 30 minutes, until a toothpick comes out clean from the center.
