Healthier No-Bake Cookies

There’s nothing easier than no-bake cookies! These cookies have been a part of my weekly meal prep rotation recently… partially due to lack of time during the CRAZIEST semester of grad school and partially due to how incredible these are. Not to mention that these healthier no-bake cookies also only take 5 minutes to make!

What makes this no-bake cookie recipe “healthier”, you might ask. All it takes are some super simple healthier ingredient swaps! Instead of butter or refined oil, I used natural nut butter (with no added oils or sugar). Coconut flour replaced traditional refined wheat flour and cocoa nibs replaced sugary chocolate chips.

All of these healthier ingredient swaps were made intentionally to support gut health! I’ve been using these healthier food swaps in my diet for over 2 years to manage my ulcerative colitis symptoms. Safe to say, I don’t plan on turning back any time soon! All of the ingredients in this healthier no-bake cookie recipe are based on the Specific Carbohydrate Diet (SCD). I’ve been able to add in a few other “non-SCD” foods back in when I’m not in an IBD flare, including unsweetened cocoa, fermented soy products, and chickpeas!

Protein-Packed Cookies!

The easiest way to get in protein EVER: delicious protein-packed cookies! You could never even guess that there’s a sneaky hit of protein in this recipe.

Although nuts are a good source of protein on their own, adding unflavored collagen powder bumps it up even more! Unflavored collagen is one of my favorite ingredients to throw into desserts to make them more satisfying without changing the texture or flavor.

These healthier protein-packed cookies have the perfect ratio of fat and protein to keep me full. Nourishing desserts are one of my must-make recipes to make for busy weeks!

What You’ll Need:

  • Paleo Nut Butter
  • Coconut Flour
  • Unflavored Collagen
  • Monk Fruit

How to Make Paleo No-Bake Cookies

Step 1: Mix all of the ingredients together in a small-medium mixing bowl.

Step 2: Mix well until a thick dough forms. Using a tablespoon, scoop out evenly sized balls of dough. Roll each ball lightly between the palms of your hands to smooth and form into a cookie shape.

Step 3: Drizzle with melted coconut butter and enjoy!

Description

Soft & sweet NO BAKE cookies, ready in minutes! These paleo cookies are also packed with protein and other nourishing ingredients to keep me healthy and satisfied. Paleo, SCD-friendly, Refined-Sugar-Free, Gluten-Free, Grain-Free, Low Carb.


Ingredients

Scale
  • 1/2 cup creamy nut butter of choice 
  • 1/4 cup unflavored collagen peptides
  • 2 tbsp. coconut flour
  • 1 tbsp. monk fruit
  • 1 tbsp. unsweetened almond milk
  • 1/2 tsp. vanilla extract
  • 1 tbsp. cocoa nibs

Instructions

  1. Combine all of the ingredients together in a mixing bowl. 
  2. Stir well until a thick cookie dough forms. Use a tablespoon to scoop out evenly-sized balls of dough. 
  3. Roll each ball between the palms of your hands to smooth and form each ball into a cookie-like shape. 
  4. Eat right away or store in the fridge for later!
