No-Bake Paleo Chocolate Chip Cookie Dough Bites

Soft, sweet, edible cookie dough recipe

I repeat. COOKIE DOUGH. Soft, sweet, and filled with dark chocolate chips. I’ve always secretly liked cookie dough more than the actual cookies…

It’s just a bonus that these cookie dough bites are grain-free, gluten-free, refined-sugar-free, paleo, and edible (no raw eggs)!

Healthier Grain-Free Cookie Dough

Cookie dough reminds me of my childhood, baking cookies with my mom, begging to lick the bowl. Maybe that’s why it’s just always been a comfort food for me!

Edible cookie dough is also so easy to make. There’s a ton of recipes out there for it BUT I wanted to create a healthier cookie dough recipe that is more Specific Carbohydrate Diet friendly! To make these cookie dough bites totally SCD, simply leave out the chocolate chips and replace them with coconut flakes, died fruit, or chopped nuts.

With that said, although I still follow the specific carbohydrate diet somewhat closely, I have been able to add a few foods back in my diet as some of my ulcerative colitis symptoms subsided. One of those foods has been unsweetened, refined-sugar-free chocolate! A list of a few other foods I’ve been able to re-incorporate are in this post.

Low sugar, low carb cookie dough bites

No-bake desserts have my heart. And I’ll tell you why in three words: effortless, immediate, idiot-proof. (The idiot I’m referring to being myself after a long day, forgetting I put something in the oven… LOL. It’s happened.) No-bake treats are also perfect as a last-minute contribution to a party, or simply as a simple sweet snack option to have stashed in the freezer!

Paleo Cookie Dough Ingredients

The BEST paleo cookie dough recipe made with cashew butter
  • Creamy, natural cashew butter

Whether you make your own (simply throw cashews in a food processor) or buy it (I love the one from Trader Joes), ALWAYS check the ingredients! This recipe works best with creamy cashew butter made from only cashews. Many companies add in cheaper filler ingredients such as palm oil and added sugar.

  • Almond flour

I always have finely ground, blanched almond flour on hand as one of my pantry staples. It’s my favorite versatile, low-carb flour to bake with at the moment!

  • Coconut flour

I use coconut flour often with recipes that include almond flour. It seems to thicken up dough mixtures to create a hardier texture that will hold a dough together. Another staple!

  • Coconut oil

Not only to I love the flavor of coconut oil, but it’s also packed with medium-chain-triglycerides (MCT’s): a type of fat that can be used as an energy source by the brain, encourage fat metabolism, and fight the growth of “bad” bacteria in the body.

  • Honey

Ah, yes. Honey makes an appearance in yet another one of my recipes… are we surprised? If it’s not already obvious, honey is my go-to SCD-legal gut healthy sweetener.

  • Almond milk

Number 2 on my list of refrigerator staples: I wasn’t kidding when I said I throw almond milk in almost everything!

  • Pure Vanilla Extract & Himalayan pink salt

I prefer to use Himalayan pink salt in some of my recipes since it contains a greater concentration of essential minerals such as calcium, potassium, magnesium, and iron than normal table salt. *note: I still incorporate table salt fortified with iodine at least once per day since*

  • Chocolate Chips

I always stick to 100% dark chocolate or Enjoy Life chocolate chips (certified paleo friendly) for my recipes! Steering clear of artificial ingredients and emulsifiers is my motto when it comes to chocolate.

How to Make Edible Cookie Dough Bites

Step 1: Throw all of the ingredients into a large mixing bowl.

Step 2: Use an electric hand mixer to beat the mixture until a thick dough forms. Stir in the chocolate chips.

Step 3: Use a tablespoon to scoop out the dough into evenly shaped bites. Smooth each ball of dough by gently rolling it between your hands.

Store in an air tight container in the refrigerator or freezer for the best texture!

Description

The BEST soft, sweet, & easy no-bake healthier cookie dough bites! Paleo, SCD-friendly, Low-sugar, Grain-free, Gluten-free, Refined-sugar-free. 


Ingredients

Scale
  • 1/2 cup creamy cashew butter
  • 3/4 cup blanched almond flour
  • 2 tbsp. coconut flour
  • 2 tbsp. coconut oil, melted
  • 2 tbsp. almond milk
  • 1 tbsp. honey 
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. Himalayan pink salt
  • 3 tbsp. Enjoy Life mini chocolate chips

Instructions

  1. Combine all of the ingredients together in a large mixing bowl. 
  2. Beat with an electric mixer until a thick dough forms and the ingredients are fully incorporated. Pause to scrape the sides of the bowl with a spatula if needed. Stir in the chocolate chips. 
  3. Use a tablespoon to scoop out about 18 balls of the dough, rolling each one gently between the palms of your hands to smooth out the edges.
  4. Place the cookie dough bites in an air-tight container to store in the refrigerator or freezer OR enjoy immediately!

Notes

To make this recipe vegan: substitute the honey for the same amount of maple syrup.

To make this recipe SCD-friendly: substitute the chocolate chips for coconut flakes, dried fruit, or chopped nuts.
