Description
Sweet & zesty healthier no-bake cookies packed with a fresh key lime flavor! This 10-minute recipe is super easy to make- it’s sure to be a crowd fav on hot summer days. SCD-friendly, paleo, grain-free, gluten-free, dairy-free, refined-sugar-free.
Ingredients
- 3/4 cup almond flour
- 2 tbsp. coconut flour
- 1/4 cup unsweetened pumpkin seed butter
- 3 tbsp. fresh lime juice
- 1 tbsp. unrefined coconut oil, softened
- 1 tbsp. honey
- 3 tsp. fresh lime zest
- 1 tsp. vanilla extract
- 2 tbsp. unsweetened coconut flakes
Instructions
- Combine all of the ingredients in a medium-sized mixing bowl.
- Mix well until a thick dough forms. I used my hands to ensure the lime zest and coconut flakes were evenly distributed.
- Scoop out balls of cookie dough with a 2-tablespoon sized measured spoon.
- While the dough is at room temperature, form each ball of cookie dough into a cookie shape with your hands.
- Cover the cookies loosely with Saran Wrap and place in the refrigerator to chill for about an hour before serving. Serve chilled for the best texture & store leftovers in the refrigerator.
Notes
Pumpkin seed butter subs: creamy cashew butter, creamy almond butter, unsweetened watermelon seed butter.
Note: color and flavor may change slightly if using another nut/seed butter!
