Description
All of the best warm, gingerbread flavors in a paleo, SCD no-bake coconut cookie! Ready in less than 10 minutes, these gingerbread-inspired cookies are the perfect last-minute addition to your holiday cookie tray.
Ingredients
- 1 cup unsweetened shredded coconut
- 3 tbsp. pecan pieces
- 1/3 cup almond flour
- 2 tbsp. coconut flour
- 1/4 cup date syrup
- 2 tbsp. coconut oil
- 1 tsp. pure vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. cloves
- 1/4 tsp. sea salt
Instructions
- Prepare a cookie tray by lining it with parchment paper.
- Add all of the ingredients (in the order listed above) to the bowl of a large food processor.
- Pulse on high for about a minute, or until all ingredients are well mixed.
- Use a 1 tbsp measuring spoon to scoop out evenly sized balls of dough. Roll each one gently between the palms of your hands and form into a cookie shape.
- Place the cookies on the prepared baking sheet and drizzle with melted coconut butter. The cookies are best chilled for at least 30 minutes, but they can also be eaten right away!
