Paleo Christmas Cookies
I’ve been determined over the past several years to expand my Christmas Cookie library. Given my HUGE sweet tooth, I feel extremely called to this mission (lol) and I’ve loved every second! Baking Christmas cookies are one of the only things that truly just gives me a wave of nostalgic childlike joy. Especially when they happen to be paleo Christmas cookies that don’t make me feel sick if I eat too many!
Don’t get me wrong, your friends and family might be highly skeptical of healthier paleo cookies infiltrating the holiday cookie tray. Speaking from personal experience, they’ll be thanking you later!
Not only do all of my paleo cookie recipes deliver the indulgent flavors of traditional cookies, but they also have natural, whole ingredients that won’t give you the dreaded sugar crash. Ever since I started eating a Paleo-style diet to help manage a few autoimmune conditions, I’ve never gone back!
What Makes Them Sweet?
Date syrup is one of my recently discovered favorite paleo & SCD legal sweeteners! Date syrup has a perfectly balanced sweet molasses-like flavor that pairs perfectly with the gingerbread flavor profile. It’s also a great binder in these types of no-bake recipes since it has a viscous, sticky consistency!
It’s probably no surprise to you that traditional refined cane sugar is not allowed on the Paleo/SCD diets. In general, refined sugar tends to drive inflammation, mood disorders, and obesity sooo I ALWAYS make sure that the sugar source I’m using is natural, from a whole food, and paired with other ingredients high in healthy fats, fiber, and protein to slow the absorption of sugar in your body!
This study specifically outlines the benefits of using dates as a sweetener. Not only do dates contain fiber to make them a lower-GI food, but they are also high in polyphenols and antioxidants that can work to reduce inflammation. However, other paleo liquid sweeteners such as honey or maple syrup (note that maple syrup is not SCD-legal) can be substituted for date syrup if you don’t have any on hand. Just notes that the flavor of the no-bake gingerbread coconut cookies may not have the same underlying molasses-like flavor!
What You’ll Need:
- 9-qt Food Processor
- Pecan Pieces
- Unsweetened Shredded Coconut
- Date Syrup
- Almond Flour
- Coconut Oil
- Pure Vanilla Extract
- Ginger (obviously!)
- Cinnamon/Cloves/sea salt
How to Make No-bake Gingerbread Coconut Cookies
Step 1: Add all of the ingredients into the bowl of a large food processor.
Step 2: Pulse on high until the ingredients are mixed well into a cohesive cookie dough.
Step 3: Scoop out 1 tbsp sized balls of cookie dough. Roll each one between the palms of your hands and shape into cookies.
Step 4: Drizzle with melted coconut butter and chill for at least 30 minutes for the best texture! They can also be eaten right away.

All of the best warm, gingerbread flavors in a paleo, SCD no-bake coconut cookie! Ready in less than 10 minutes, these gingerbread-inspired cookies are the perfect last-minute addition to your holiday cookie tray.
Ingredients
- 1 cup unsweetened shredded coconut
- 3 tbsp. pecan pieces
- 1/3 cup almond flour
- 2 tbsp. coconut flour
- 1/4 cup date syrup
- 2 tbsp. coconut oil
- 1 tsp. pure vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. cloves
- 1/4 tsp. sea salt
Instructions
- Prepare a cookie tray by lining it with parchment paper.
- Add all of the ingredients (in the order listed above) to the bowl of a large food processor.
- Pulse on high for about a minute, or until all ingredients are well mixed.
- Use a 1 tbsp measuring spoon to scoop out evenly sized balls of dough. Roll each one gently between the palms of your hands and form into a cookie shape.
- Place the cookies on the prepared baking sheet and drizzle with melted coconut butter. The cookies are best chilled for at least 30 minutes, but they can also be eaten right away!
