Guilty of: Kicking off the new year by sneaking collagen into literally anything & everything possible. Unapologetic for: Making a batch of my no-bake caramel latte collagen bites 3 times already (and it’s only been 12 days…)

The Easiest Caramel Latte Collagen Bites

Not to be dramatic, but these caramel latte collagen bites are truly the easiest homemade snack in existence. Goals for 2024 involve surrounding myself with low-maintenance food & people; this recipe fits the bill perfectly. These caramel latte collagen bites are made with just 7 simple ingredients, take less than 5 minutes to make, and are customizable to whatever type of nut butter or liquid sweetener you have on hand.

What else is so easy about this recipe? THE FLAVOR!

If you’re even an ounce of a coffee person, nothing will be easier than falling in love with the caramel latte essence that this collagen bite recipe delivers. The sweet & nutty backdrop of these bites pairs perfectly with the deepness of the espresso powder to create a magical combo. A combination so good that it might just have you stuck on the same caramel latte collagen bite snack train that I can’t seem to get off of!

Collagen Benefits

In the categories of both health & (lack of) flavor, collagen protein is one of my favorite supplements to sneak into my diet as much as possible. Not only does it easily dissolve without changing the flavor or consistency, but collagen has also been associated with a plethora of health benefits! It’s crazy to believe that we used to throw away the biggest sources of collagen in the food industry (cartilage & skin tissue). Since the Supplement industry began upcycling these undesirable parts of meat into a clean, hydrolyzed powder, collagen is now considered a valuable nutraceutical product used for improving skin health, gut health, and bone strength.

I know it probably sounds like these collagen benefits are too good to be true, but tons of recently published research studies can back up my statements! A recent 2023 review paper on collagen benefits decreased wrinkle formation; increased skin elasticity; increased hydration; increased collagen content, density, and synthesis, which are factors closely associated with aging-related skin damage. This group of researchers also compiled data to suggest that supplementing with collagen also increases bone strength, density, and mass to prevent bone loss in older adults.

A separate 2023 study also revealed potential prebiotic effects that may be contributing to the several collagen benefits we are aware of. This paper found that collagen supplementation increased the ratio of beneficial probiotic species to “bad” species. Consequences of this result not only include reducing gut inflammation and improving digestive disorders, but they also mitigated abdominal fat accumulation induced by a high-fat diet.

IBD-Friendly Snacks

It’s no secret that the ultra-processed landscape of the snack world probably isn’t helping anyone’s digestive health. Let alone those of us with IBS or IBD!

If you’re also living a busier life than ever before, sitting down for a full homemade plated meal every time you eat also isn’t necessarily the most feasible option. While I miss not being able to grab my old favorite pre-packaged foods, I’ve found a new love and appreciation for IBD-friendly snacks that have me feeling energized and satisfied!

IBD-friendly snacks are also the easiest to make. Easily digestible foods are inherently simple and minimally processed, so naturally IBD-friendly snacks follow suit! A few key things I always make sure to look for in my snack choices include:

  • Simple ingredients
  • Low sugar & NO refined sugar
  • At least 5 grams of protein
  • Lots of healthy fats
  • Soluble fiber

What You’ll Need:

  • Food Processor OR Medium Mixing Bowl
  • Small Cookie Sheet
  • Parchment Paper
  • Creamy Almond Butter
  • Liquid Allulose OR Honey
  • Coconut Flour
  • Unflavored Grass-Fed Collagen Peptides
  • Espresso Powder
  • Pure Vanilla Extract
  • A batch of my SCD Caramel Sauce

How to Make No-Bake Caramel Latte Collagen Bites:

Step 1: Combine all of the ingredients (besides the SCD Caramel Sauce) into the bowl of a food processor. A medium-sized mixing bowl works as well if you need to get an arm workout in!

Step 2: Mix on a high setting until a cohesive mixture forms. Depending on the brand & type of nut butter used, the mixture should be somewhere between crumbly to cookie-dough-like in texture.

Step 3: Scoop out the mixture in evenly-sized balls. Roll each bite between the palms of your hands to smooth and set on a small cookie sheet lined with parchment paper. Chill for at least 30 minutes in the freezer.

Step 4: (Optional but HIGHLY recommended!!) While the no-bake caramel latte collagen bites chill, prepare the 5-minute SCD caramel sauce to drizzle on top.

Refrigerate all leftover no-bake caramel latte collagen bites in an air-tight container to enough throughout the week!

Description

An easy, no-bake healthy protein bite recipe, packed with nourishing collagen and an unforgettable sweet coffee flavor. Grain-Free, Gluten-Free, Refined-Sugar-Free, Dairy-Free, Keto Friendly.


Ingredients

Scale
  • 1/2 cup Creamy Almond Butter (130 g)
  • 2 tbsp. Coconut Flour (15 g)
  • 2 tbsp. Liquid Allulose (can sub honey) (40 g)
  • 1/4 cup Unflavored Collagen Peptides (35 g)
  • 1 tsp. Espresso Powder
  • 1 tsp. Pure Vanilla Extract
  • SCD Caramel Sauce, to taste

Instructions

  1. Line a small baking sheet with parchment paper & set aside.
  2. Combine all of the ingredients at once in a food processor or mixing bowl.
  3. Mix well until a cohesive mixture forms. It should have a texture similar to cookie dough, but may depend on the source/type of nut butter used.
  4. Roll the mixture into 12 evenly-sized bites, using the palms of your hands to smooth.
  5. Freeze for at least 30 minutes to chill before enjoying!

Notes

Refrigerate all leftover collagen bites in an air-tight container.
