Description
A creamy cashew-based dip with all of my favorite Mediterranean inspired flavors! This cashew is made with SCD-Legal healthy ingredients and tons of anti-inflammatory herbs & spices.
Ingredients
- 1 cup cashew halves
- 2 tbsp. roasted red pepper bruschetta
- 2 tbsp cold-pressed extra virgin olive oil
- 1 tsp coconut aminos
- 1/2 tsp minced garlic
- 1/4 tsp dried oregano
- 1/4 tsp paprika
- 1/4 tsp turmeric
- 1/4 tsp salt
- black pepper to taste
Instructions
- Soak the cashew halves for at least 30 minutes in hot water.
- Drain and rinse the soaked cashews. Add them to a food processor with the rest of the ingredients.
- Blend on high until smooth and creamy, about 3- 5 minutes.
- (Optional) top with more red pepper bruschetta and olive oil to serve.
Notes
Store leftover cashew dip in the refrigerator for up to 2 weeks.
