Mediterranean Cashew Dip

Description

A creamy cashew-based dip with all of my favorite Mediterranean inspired flavors! This cashew is made with SCD-Legal healthy ingredients and tons of anti-inflammatory herbs & spices. 


Ingredients

Scale
  • 1 cup cashew halves
  • 2 tbsp. roasted red pepper bruschetta 
  • 2 tbsp cold-pressed extra virgin olive oil
  • 1 tsp coconut aminos
  • 1/2 tsp minced garlic
  • 1/4 tsp dried oregano
  • 1/4 tsp paprika
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • black pepper to taste

Instructions

  1. Soak the cashew halves for at least 30 minutes in hot water.
  2. Drain and rinse the soaked cashews. Add them to a food processor with the rest of the ingredients. 
  3. Blend on high until smooth and creamy, about 3- 5 minutes.
  4. (Optional) top with more red pepper bruschetta and olive oil to serve. 

Notes

Store leftover cashew dip in the refrigerator for up to 2 weeks.
