Description
Perfect crispy tuna cakes exploding with my favorite Tex Mex flavors! This single-serve recipe is one of my favorite high-protein, healthier easy dinners for busy weeknights. Grain-Free, Gluten-Free, Oil-Free, High-Protein, Egg-Free, Single-Serve.
Ingredients
- 1, 5oz. can wild caught albacore tuna in water
- 1/4 cup plain Greek yogurt
- 2 tbsp. black beans
- 1 tbsp. coconut flour
- 1 tsp. fresh lime juice
- 1 tsp. sriracha
- 1/2 tsp. cumin
- 1/2 tsp. dried cilantro
- 1/2 tsp. minced garlic
- 1/4 tsp. chili powder
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- (Optional) 0.5 oz. shredded aged cheddar cheese
Instructions
- Prepare the basket of a large air fryer with a sheet of parchment paper.
- Drain and rinse the tuna, and finely shred with a fork. Lightly pat dry with a paper towel.
- Add the tuna and all of the other ingredients and spices (besides the cheese) into a bowl. Mix until well combined.
- Form the tuna mixture into 3-5 tuna cakes and place in the prepared air fryer basket.
- Air fry at 375F for 10-12 minutes, until the exterior of the tuna cakes is a deep golden brown color. Top with the shredded cheese and air fry for an additional 3 minutes to melt the cheese.
- Eat warm!
Notes
Bake method: Bake at 400F for 15 minutes.
