Healthier Tex Mex Tuna Cakes (Single-Serve)

Description

Perfect crispy tuna cakes exploding with my favorite Tex Mex flavors! This single-serve recipe is one of my favorite high-protein, healthier easy dinners for busy weeknights. Grain-Free, Gluten-Free, Oil-Free, High-Protein, Egg-Free, Single-Serve.


Ingredients

  • 1, 5oz. can wild caught albacore tuna in water
  • 1/4 cup plain Greek yogurt
  • 2 tbsp. black beans
  • 1 tbsp. coconut flour
  • 1 tsp. fresh lime juice
  • 1 tsp. sriracha
  • 1/2 tsp. cumin
  • 1/2 tsp. dried cilantro
  • 1/2 tsp. minced garlic
  • 1/4 tsp. chili powder
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • (Optional) 0.5 oz. shredded aged cheddar cheese

Instructions

  1. Prepare the basket of a large air fryer with a sheet of parchment paper.
  2. Drain and rinse the tuna, and finely shred with a fork. Lightly pat dry with a paper towel.
  3. Add the tuna and all of the other ingredients and spices (besides the cheese) into a bowl. Mix until well combined.
  4. Form the tuna mixture into 3-5 tuna cakes and place in the prepared air fryer basket.
  5. Air fry at 375F for 10-12 minutes, until the exterior of the tuna cakes is a deep golden brown color. Top with the shredded cheese and air fry for an additional 3 minutes to melt the cheese.
  6. Eat warm!

Notes

Bake method: Bake at 400F for 15 minutes.
