Greek Yogurt Chocolate Mini Muffins (Egg-Free, GF)

Description

Rich and decadent grain-free, egg-free chocolate muffins made with Greek yogurt! Who doesn’t love a secretly healthy breakfast that tastes like dessert while also packing a punch of 10 grams of protein? Grain-free, Egg-Free, Gluten-Free, Refined-Sugar-Free, Low Sugar. 


Ingredients

  • 3/4 cup almond flour
  • 1/4 cup unmodified potato starch
  • 1/4 cup cocoa powder
  • 1/3 cup granulated monk fruit sweetener
  • 3 tsp. instant coffee (optional but recommended!)
  • 1/2 tsp. baking powder
  • 1/2 tsp, baking soda
  • 1/4 tsp. sea salt
  • 1 cup plain unsweetened Greek yogurt
  • 1 tsp. pure vanilla extract 
  • (Optional for garnish) 2 tsp. monk fruit, powdered in a spice grinder 

Instructions

  1. Preheat the oven to 375F and prepare a mini muffin tin by lightly spraying it with non-stick coconut oil cooking spray. 
  2. Combine all of the ingredients together (excluding the Greek yogurt, vanilla, and powdered monk fruit) and stir until well-combined. 
  3. Add in the Greek yogurt and vanilla extract. Mix until a thick muffin batter forms. 
  4. Use a tablespoon to evenly scoop out 28 balls of dough. Roll each one between the palms of your hands lightly to smooth and place in the prepared mini muffin tin. 
  5. Bake for 12 minutes, or until a toothpick comes out clean from the center of a muffin. Let them cool completely (about 10 minutes) before removing the muffins.
  6. (optional) garnish with a sprinkle of powdered monk fruit & enjoy!
