Description
Rich and decadent grain-free, egg-free chocolate muffins made with Greek yogurt! Who doesn’t love a secretly healthy breakfast that tastes like dessert while also packing a punch of 10 grams of protein? Grain-free, Egg-Free, Gluten-Free, Refined-Sugar-Free, Low Sugar.
Ingredients
- 3/4 cup almond flour
- 1/4 cup unmodified potato starch
- 1/4 cup cocoa powder
- 1/3 cup granulated monk fruit sweetener
- 3 tsp. instant coffee (optional but recommended!)
- 1/2 tsp. baking powder
- 1/2 tsp, baking soda
- 1/4 tsp. sea salt
- 1 cup plain unsweetened Greek yogurt
- 1 tsp. pure vanilla extract
- (Optional for garnish) 2 tsp. monk fruit, powdered in a spice grinder
Instructions
- Preheat the oven to 375F and prepare a mini muffin tin by lightly spraying it with non-stick coconut oil cooking spray.
- Combine all of the ingredients together (excluding the Greek yogurt, vanilla, and powdered monk fruit) and stir until well-combined.
- Add in the Greek yogurt and vanilla extract. Mix until a thick muffin batter forms.
- Use a tablespoon to evenly scoop out 28 balls of dough. Roll each one between the palms of your hands lightly to smooth and place in the prepared mini muffin tin.
- Bake for 12 minutes, or until a toothpick comes out clean from the center of a muffin. Let them cool completely (about 10 minutes) before removing the muffins.
