Egg-Free Baking
In light of the recent egg shortage, I have been extra desperate to perfect a few easy recipes that don’t need them. It was remarkable how humbling this process was to be totally transparent! Since being diagnosed with ulcerative colitis and extreme gut microbiome dysbiosis, eggs have been one of my go-to “safe foods”.
Not only are eggs a micronutrient powerhouse, but eggs are also a really great highly bioavailable protein source and high in healthy omega-3 fatty acids. Even though they are a common allergen, the lucky people who don’t have an intolerance to them typically find eggs super easy to digest. I would honestly be at a loss without eggs in my diet as a healthy filling breakfast, for all of my paleo baked desserts, or for my beloved grain-free gluten-free pancakes & waffles.
But alas, eggs are reaching record high prices so as a grad student on a tight budget I’m really trying to be responsible in this department. I like to think I’m taking a massive step out of my comfort zone with incorporating more egg-free recipes into my diet this next week or two. Creativity truly is born out of necessity sometimes, huh?
A Healthy Muffin Recipe
After complaining about the lack of eggs in my life at the moment, I feel like I haven’t hyped up how absolutely delicious this healthy chocolate muffin recipe is yet! Eating these muffins is like eating a rich, decadent chocolate cake for breakfast and I’m 100% here for it. There is no better combo than chocolate and coffee in the morning, I don’t know if you can convince me otherwise.
You may be wondering, what exactly makes these chocolate mini muffins “healthy”?!
Despite not having one of the arguably healthiest ingredients I can think of (eggs), these muffins are still an incredibly healthy breakfast recipe. These healthy chocolate muffins are made with only 9 simple ingredients and are packed with high quality protein from unsweetened Greek yogurt. On top of that, this muffin recipe uses granulated monk fruit instead of refined sugar.
The combo of high protein & low sugar in this healthier chocolate muffin recipe is the secret sauce to keeping you full & energized through the whole morning!
The type of instant coffee I used in this recipe is also infused with adaptogens. Adaptogens are considered to be compounds that buffer and modulate any extreme conditions or reactions in your body. I’ve noticed the biggest difference in overall focus and not getting the common “afternoon crash” feeling. With that said, regular instant coffee will still get the job done in terms of perfectly elevating the chocolate flavor in these egg-free mini muffins
Baking with Greek Yogurt
Greek yogurt is surprisingly a great egg or baking powder substitute for recipes in the muffin/cake/loaf realm. Probiotics release gasses as they heat up, which is why Greek yogurt can work as a leavening agent of sorts! Another way plain yogurt can help dough rise is its natural acidity. With recipes that require baking soda, they often also require an acidic ingredient to activate it. Instead of using lemon juice or apple cider vinegar, bakers often choose to use Greek yogurt to also add extra moisture to the product. It also makes all of the recipes I’ve used it in so far stay super moist. Even with certain grain-free flours that can get gritty and dry in texture pretty easily (like coconut flour, green banana flour, etc.) Greek yogurt seems to prevent that from happening.
Although Greek yogurt can have a tangy flavor- especially if you are using an unsweetened unflavored Greek yogurt- its very easily covered up by the deep dark chocolate flavor of these muffins. Any assertive flavors like chocolate, ripe fruit, cinnamon, and even pure vanilla can usually cover it up pretty easily. Even in recipes where you can still slightly taste the Greek yogurt, I think it adds a really nice balance to the sweetness or spices that the other ingredients bring to the table.

- Mini Muffin Baking Tin
- Coconut Oil Non-Stick Spray
- Almond Flour
- Potato Starch
- Cocoa Powder
- Monk Fruit Sweetener
- Sea Salt
- Pure Vanilla Extract
- Instant Coffee (I used Four Sigmatic Adaptogen Coffee)
- Plain Unsweetened 2% Greek Yogurt
How to Make Egg-Free Chocolate Muffins
Step 1: Preheat the oven and lightly spray mini-muffin molds with non-stick coconut oil spray. In a mixing bowl combine all of the ingredients (besides the Greek yogurt and vanilla extract). Stir well.
Step 2: Add the Greek yogurt and vanilla extract and mix again until a thick dough forms. Use a tablespoon to scoop out evenly sized balls of dough into each mini muffin mold.
Step 3: Bake for 12 minutes at 375F or until a toothpick comes out clean from the center. Let the muffins cool completely before turning out of the molds & enjoy!

Ingredients
- 3/4 cup almond flour
- 1/4 cup unmodified potato starch
- 1/4 cup cocoa powder
- 1/3 cup granulated monk fruit sweetener
- 3 tsp. instant coffee (optional but recommended!)
- 1/2 tsp. baking powder
- 1/2 tsp, baking soda
- 1/4 tsp. sea salt
- 1 cup plain unsweetened Greek yogurt
- 1 tsp. pure vanilla extract
- (Optional for garnish) 2 tsp. monk fruit, powdered in a spice grinder
Instructions
- Preheat the oven to 375F and prepare a mini muffin tin by lightly spraying it with non-stick coconut oil cooking spray.
- Combine all of the ingredients together (excluding the Greek yogurt, vanilla, and powdered monk fruit) and stir until well-combined.
- Add in the Greek yogurt and vanilla extract. Mix until a thick muffin batter forms.
- Use a tablespoon to evenly scoop out 28 balls of dough. Roll each one between the palms of your hands lightly to smooth and place in the prepared mini muffin tin.
- Bake for 12 minutes, or until a toothpick comes out clean from the center of a muffin. Let them cool completely (about 10 minutes) before removing the muffins.
