Strawberry shortcake is one of my absolute favorite fresh fruity dessert, so why not make it into an acceptable healthy breakfast?!
A Healthier Donut Hole Recipe
If you’re on the search for healthier treats after the holidays, you found a good one! This donut hole recipe is the perfect easy sweet breakfast (in my humble opinion anyways). I’ve been working out and going on runs first thing in the morning recently, and I always find myself craving all the sugar afterwards. Cue donut holes! Cue nourishing post-workout ingredients!
The secret to keeping these donut holes low in sugar and healthier: Greek yogurt and monk fruit.
I love using greek yogurt in air fryer recipes. I feel like it keeps the baked donuts moist and delicious in a way that eggs or any other “binder” type of ingredient wouldn’t. Using Greek yogurt also adds a lot of great high-quality protein to this recipe. High-quality protein is great for post-workout recovery or a satisfying snack before bed! Monkfruit is also one of my favorite natural, low sugar sweeteners that doesn’t upset my stomach. I tend to be VERY sensitive to sugar alcohols and sugar (thanks to IBD lol).
Grain-Free Baking
Since being diagnosed with ulcerative colitis almost 2 years ago, I’ve been forced to master the art of grain-free baking. To help manage UC flares, I follow the Specific Carbohydrate Diet (SCD, for short) very closely. The SCD focuses on removing specific inflammatory carbohydrates (grains, gluten, refined sugar) and incorporating high-quality protein and healthy fats.

Some of my favorite pantry staples to have on hand for grain-free baking include almond flour, coconut flour, coconut oil, honey, and monkfruit (among others too, of course)! Finely ground almond flour is one of my favorite flour substitutes for healthy grain-free baking. It can be used pretty much 1:1 for traditional wheat flour. Although it’s not quite the same, I’ve actually really come to love baking with it.
PLUS I feel so much better after eating sweets that are high in healthy fats instead of highly processed white flour and refined carbohydrates!
What You’ll Need:
How to Make Air Fryer Donut Holes
Step 1: Combine all of the dry ingredients in a mixing bowl and stir well. Add the plain Greek yogurt and mix until a thick dough forms.
Step 2: Use a tablespoon to scoop out about 30 evenly sized balls of dough. Roll each ball of dough lightly between the palms of your hands to smooth. Place spaced at least 3 inches apart in an air fryer basket lined with parchment paper. Bake for 12 minutes, or until the edges are lightly golden brown.
Step 3: Melt the coconut butter and coconut oil together to make the glaze. Toss each baked donut hole in the coconut butter glaze and set aside to dry. Store extras in an air tight container.
