Description
Light & fluffy healthier donut holes ready in just minutes! Perfectly sweet with a subtle pumpkin spice flavor & 3-ingredient honey glaze: yum. Grain-free, Refined-sugar-free, Gluten-free, Gut healthy, & just 2 grams of sugar per donut!
Ingredients
- 3/4 cup blanched almond flour
- 1/2 cup tapioca flour
- 1/4 cup arrowroot starch
- 1/4 cup coconut flour
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup pumpkin puree
- 2/3 cup Plain Greek yogurt (or SCD yogurt)
- 1 tbsp. honey
- 1 tsp. pure vanilla extract
Glaze:
- 1/4 cup coconut butter
- 1/2 tbsp. coconut oil
- 1 tbsp. honey
Instructions
- Preheat your air fryer to 350F (if needed). Lightly spray the air fryer basket with cooking spray (I use either coconut or avocado oil spray)
- In a large mixing bowl whisk together the almond flour, tapioca flour, arrowroot starch, coconut flour, baking powder, cinnamon, and salt.
- Add in the pumpkin puree, Greek yogurt, honey, and vanilla. Stir well until a cohesive dough forms.
- Using a tablespoon, measure out evenly sized balls of the dough and place on to a baking sheet lined with parchment paper. Smooth out each donut hole by lightly rolling it between your hands.
- Place the donut holes into the air fryer basket, spaced at least an inch and a half apart from each other.
- Air fry for about 8 minutes.
- While the donut holes are baking, make the glaze: combine the ingredients in a small stovetop pan over low heat. Stir frequently for 3-5 minutes, just until the coconut butter is melted. Remove from heat.
- Toss the air fried donut holes in the glaze mixture & enjoy!
Notes
Bake method: keep the donut holes on the baking sheet with parchment paper & bake at 400F for 10 minutes.
