Description
Perfectly soft & sweet melt-in-your-mouth cookies riddled with aged parmesan cheese and toasted walnuts for the best balanced flavor combination! Grain-Free, Gluten-Free, Refined-Sugar-Free.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tbsp tapioca flour
- 1/2 cup shredded aged parmesan cheese
- 1/4 cup chopped walnuts
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/4 cup date syrup
- 1/4 cup extra virgin olive oil
- 2 tsp vanilla extract
- (Optional) 1/3 cup coconut butter
Instructions
- Preheat the oven to 350F. Prepare a baking sheet by lining it with parchment paper.
- Combine the dry ingredients (almond flour, coconut flour, tapioca flour, parmesan, walnuts, baking soda, and salt) in the bowl of a large food processor. Pulse 3-5 times to mix.
- Add in the egg, olive oil, date syrup, and vanilla extract and blend for about one minute, or just until a thick cookie dough forms.
- Use a tablespoon to scoop out evenly-sized balls of cookie dough on to the prepared baking sheet. Roll each ball of dough lightly between the palms of your hands and flatten each one lightly before baking.
- Bake for 7 minutes, let cool & serve!
- (Optional) Drizzle each cookie with melted coconut butter to decorate.
Notes
Date syrup can be subbed for an equal amount of honey or maple syrup.
