Grain-Free Birthday Cake Donut Holes

Description

Soft and fluffy grain-free donut holes riddled with sugar-free sprinkles and a sweet birthday cake flavor! Made with nourishing ingredients, these delicious donut holes are one of my favorite healthy breakfast treats to make on weekends. Grain-free, Gluten-free, Refined-sugar-free, SCD-friendly, Oil-free.


Ingredients

Scale
  • 3/4 cup almond flour
  • 1/3 cup tapioca flour
  • 1/4 cup coconut flour
  • 1/3 cup monk fruit sweetener
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1 tbsp. sugar-free rainbow sprinkles
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. almond extract
  • 1 cup plain greek yogurt

Glaze: 

  • 1/4 cup coconut butter
  • 2 tbsp. coconut oil
  • 1/4 tsp. vanilla extract

Instructions

  1. Prepare an air fryer basket by lining it with parchment paper. If baking: preheat the oven to 400F and prepare a baking sheet by lining it with parchment paper. 
  2. Combine the almond flour, tapioca flour, coconut flour, monk fruit, baking powder/soda, sea salt, and sprinkles in a large mixing bowl. Stir until well combined. 
  3. Add in the vanilla extract, almond extract, and greek yogurt. Mix well until a thick dough forms (I found it easiest to knead it together with my hands). 
  4. Use a tablespoon to scoop out about 30 evenly sized balls of dough. Roll each one lightly between the palms of your hands to smooth out the edges. Place them spaced about 3 inches apart in the air fryer basket or cookie sheet. 
  5. Air fry at 325F for 10-12 minutes. Bake at 400F for 15 minutes. 
  6. As the donut holes bake, melt the coconut butter, coconut oil, and vanilla together to make the glaze. Stir well until smooth. 
  7. Let the donuts cool for about 5 minutes before tossing them in the glaze. 
  8. Place them back on the cookie sheet to “dry” before serving! 
  9. Store leftover donut holes in an air tight container in the refrigerator for up to 1 week.
