Description

Light and fluffy air fried biscuits made with Greek yogurt and almond flour for a gut healthy twist on this classic breakfast recipe! Grain-free, Gluten-free, Refined-Sugar-Free, Keto-friendly. 


Ingredients

  • 1/4 cup almond flour
  • 1 tbsp. tapioca flour 
  • 1 tbsp. coconut flour
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 1/8 tsp cinnamon
  • 2 tbsp. dried wild blueberries
  • 2 tbsp. finely shredded sharp white cheddar cheese
  • 1/4 cup plain greek yogurt

Instructions

  1. Prepare an air fryer basket (or cookie sheet, if using an oven) by lining it with parchment paper. 
  2. In a small bowl, combine the almond flour, tapioca flour, coconut flour, baking powder, salt, cinnamon, blueberries, and cheese. Stir well. 
  3. Stir in the Greek yogurt and mix until a thick dough forms. 
  4. Divide the dough in half. Roll each half between the palms of your hand to form smooth biscuits. Place them in the air fryer basket at least 3″ apart. 
  5. Air fry for 15 minutes at 325F or bake in the oven for 15-17 minutes minutes at 400F. 

Notes

Depending on how thick the Greek yogurt is, more may have to be added to form the dough. Start with 1/4 cup and gradually add more as needed!
