A Healthier Air-Fried Biscuit Recipe!
I absolutely love my air fryer. You can find me using it multiple times per day, everyday (lol). Naturally, I had to devise a fun breakfast biscuit recipe that has the perfectly fluffy center and golden-brown edges that can still hold up to a fried egg or melted butter.
This healthier breakfast biscuit recipe is made with almond flour and greek yogurt for a gut-healthy spin on the classic biscuit. Without gluten, grains, or refined sugar, these biscuits keep me perfectly full and. energized throughout the morning!
They also pair perfectly with a hearty breakfast bowl, nut butter, coconut oil, grass-fed butter… anything really! Combining sweet, slightly tart wild berries with sharp aged white cheddar cheese is simply a sweet/savory match made in heaven. TRUST ME.
Baking with Greek Yogurt
Greek yogurt is phenomenal in so many baked recipes. Especially with grain-free/ gluten-free flour options, its very easy for anything baked to become super dry. Without a good network of gluten to trap in moisture, almond and coconut flour breads and cakes are notoriously on the dry side…
Cue Greek yogurt! I simply use plain, unsweetened greek yogurt in place of eggs sometimes for the binder in a recipe. It seems to keep the inside of whatever you’re baking super moist without making it “mushy”.
Plain Greek yogurt also has an incredible slightly tangy, slightly sweet flavor that pairs super well with the fruit and cheese in these biscuits! Not to mention, Greek yogurt is also an incredible source of high-quality protein and probiotics for a healthy gut.
All things considered, this healthy biscuit recipe is my ideal weekend breakfast situation!
Baking with an Air Fryer
An air fryer works like a mini countertop convection oven. Long story short, hot air blows around from all directions to bake things by direct contact with the heat carried by the air. With that said, if you don’t happen to own an air fryer, these will work just as well using the convection setting on your oven!
Even though a “regular” conventional oven will work as well (you’ll just have to bake it a little longer!), an air fryer is incredible is you’re trying to achieve a beautiful, evenly golden-brown exterior while still trapping in as much moisture as possible.
Another tip I’ve learned when I want to bake with my air fryer to to always ALWAYS line the basket with parchment paper! Some doughs are stickier than others, but I like to air on the side of caution. While non-stick cooking spray works well for air frying veggies and meat, I’ve had to adopt a whole new strategy with grain-free dough in there.

How to Make Grain-Free, Single-Serve Biscuits
Step 1: Mix all of the ingredients together (besides the greek yogurt) in a small mixing bowl. Stir well.
Step 2: Add in the plain Greek yogurt and mix until a thick dough forms.
Step 3: Divide the dough into 2 equal halves. Form each half of dough into a ball with your hands and place them in the air fryer basket lined with parchment paper.
Step 4: Bake for about 15 minutes & let them cool for at least 5 minutes before slicing.

Light and fluffy air fried biscuits made with Greek yogurt and almond flour for a gut healthy twist on this classic breakfast recipe! Grain-free, Gluten-free, Refined-Sugar-Free, Keto-friendly.
Ingredients
- 1/4 cup almond flour
- 1 tbsp. tapioca flour
- 1 tbsp. coconut flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1/8 tsp cinnamon
- 2 tbsp. dried wild blueberries
- 2 tbsp. finely shredded sharp white cheddar cheese
- 1/4 cup plain greek yogurt
Instructions
- Prepare an air fryer basket (or cookie sheet, if using an oven) by lining it with parchment paper.
- In a small bowl, combine the almond flour, tapioca flour, coconut flour, baking powder, salt, cinnamon, blueberries, and cheese. Stir well.
- Stir in the Greek yogurt and mix until a thick dough forms.
- Divide the dough in half. Roll each half between the palms of your hand to form smooth biscuits. Place them in the air fryer basket at least 3″ apart.
- Air fry for 15 minutes at 325F or bake in the oven for 15-17 minutes minutes at 400F.
Notes
Depending on how thick the Greek yogurt is, more may have to be added to form the dough. Start with 1/4 cup and gradually add more as needed!
