A Single-Serve Paleo Cookie
This healthier honeybun cookie recipe has very quickly become one of my favorite treats to make for myself at the end of a long day. Especially when I don’t want to make and store a whole batch of cookies for just myself, this single-serve recipe is a life saver!
This single-serve cookie is so easy to make. The ingredients are simple, you only need one bowl, and it only takes minutes to make. Although this cookie is totally shareable, I love having a whole giant cookie to myself when my sweet tooth is extra big.
Since this single-serve cookie is made with paleo ingredients full of healthy fats, fiber, and no refined sugar I always feel really great and satisfied after eating the whole thing- unlike most desserts. This cookie recipe is so satisfying (no sugar crash woo!!) without leaving you hangry in an hour!
Baking with Monk Fruit
Monk fruit is my secret to creating low-sugar baked desserts. Granulated monk fruit is especially great for things like cookies, cakes, and muffins since liquid alternative/natural sweeteners (honey, maple syrup, agave) would weigh these down too much to rise like they should. Some things are better baked with a liquid sweetener: think dense brownies, cheesecakes, pies.
Considering that this paleo cookie recipe is also vegan (aka no eggs) using lighter-weight, dry ingredients is key to a good fluffy cookie. Monk fruit is one of my favorite no-sugar granulated sweeteners. I don’t have to use as much of it compared to cane sugar since the mogroside molecules in monk fruit are 200 times sweeter than sucrose!
Monk fruit also doesn’t seem to upset my stomach at all like some sugar alcohols do even though they aren’t necessarily considered to be “legal” on the Specific Carbohydrate Diet. I’ve been following the Specific Carbohydrate Diet very closely since I was diagnosed with ulcerative colitis over 2 years ago. Recently, I’ve been able to re-introduce a few things (unsweetened cocoa, chickpeas, and some sweeteners like stevia and monk fruit) that aren’t traditionally included!

How to Make a Paleo Honeybun Cookie:
Step 1: Combine the almond flour, coconut flour, monk fruit, cinnamon, baking soda, and salt in a small mixing bowl. Stir well.
Step 2: Add in creamy nut butter, almond milk, and vanilla extract. Mix until a thick cookie dough forms.
Step 3: Prepare a baking sheet by lining it with a small square of parchment paper. Transfer the ball of cookie dough on to the parchment paper and lightly press it into the shape of a cookie. Use the handle of a spoon or fork to form the honeybun “swirl” pattern on the top of the unbaked cookie.
Step 4: Bake for 15-17 minutes, until the edges are slightly golden-brown.
Step 5: Make the paleo honeybun glaze by melting the honey with cashew butter and coconut oil in the microwave for 30- 40 seconds. Drizzle evenly over the cookie & enjoy!

Ingredients
Cookie:
- 3 tbsp almond flour
- 1/2 tbsp coconut flour
- 1 tbsp monk fruit sweetener
- 1/4 tsp cinnamon
- 1/4 tsp baking soda
- 1/8 tsp salt
- 2 tbsp creamy nut butter
- 2 tbsp almond milk
- 1/2 tsp vanilla extract
Glaze:
- 1 tbsp coconut oil
- 1 tbsp honey
- 1/2 tbsp creamy cashew butter
Instructions
- Preheat the oven to 350F. Prepare a baking sheet with a small square of parchment paper and set aside.
- In a small bowl, combine the almond flour, coconut flour, monk fruit, cinnamon, baking soda, and salt. Stir well.
- Add in the nut butter, almond milk, and vanilla. Mix well until a thick dough forms.
- Transfer the ball of cookie dough on to the prepared parchment paper and form it into a cookie shape.
- Use the handle of a fork or spoon to make the “swirl pattern” on top of the unbaked cookie to mimic a honeybun.
- Bake for 15-17 minutes, until the edges are slightly golden-brown.
- Make the glaze by melting the glaze ingredients together in a microwave-safe dish for 30-40 seconds. Drizzle evenly over the cookie and enjoy!
