An Easy Single-Serve Dessert
I’ve been all about single-serve desserts since I started the “college” phase of my life five years ago. Living and grocery shopping for myself has taught me that (1) I don’t need a family-sized sheet of brownies to try and eat before they go bad (2) I tend to randomly crave different desserts based on the day (3) it’s exhausting to clean up and store huge amounts of leftovers. SO out of necessity at the time, I quickly became a fan of any recipe that had “single-serve” in the title!
Even if you aren’t living by yourself or in small college living situations, single-serve desserts are perfect when you just want something quick and easy. I don’t even think twice about making a single cookie these days. It only takes 20 minutes AND you aren’t left with a whole batch and multiple mixing bowls after!
A Delicious Paleo Cookie Recipe!
Crispy on the outside, soft and gooey on the inside. Oh, and add melty chocolate chips with a finish of flakey sea salt. And make it paleo, please!

I started following a Paleo-style diet gradually after starting to re-introduce foods back into the Specific Carbohydrate Diet, which I followed for a long time after being diagnosed with ulcerative colitis almost 2 years ago. Since then, I’ve made it my own personal mission to re-create all of my old favorite treats with paleo ingredients!
Double dark chocolate cookies were a classic favorite cookie of mine. Naturally, it was only a matter of time before I found a paleo version that is arguably just as good as the original recipe!

How to Make a Single-Serve Cookie:
Step 1: Mix the almond flour, coconut flour, cocoa powder, monk fruit, and baking soda until well combined.
Step 2: Add in the creamy cashew butter, almond milk, and vanilla. Stir well until a thick cookie dough forms.
Step 3: Transfer the dough on to a cookie sheet lined with a small square of parchment paper. Shape it into a circle and press down slightly. Lightly press paleo chocolate chips and a pinch of flakey sea salt on top of the dough and bake.
Step 4: Enjoy warm!

A soft and gooey paleo double dark chocolate cookie with perfectly crispy edges and melty chocolate chips, for one! Paleo, Refined-sugar-free, Grain-Free, Gluten-Free, Dairy-Free, Vegan, Low Sugar, Dairy-Free.
Ingredients
- 3 tbsp. almond flour
- 2 tbsp. cocoa powder
- 1 tbsp. monk fruit sweetener
- 1/4 tsp. baking soda
- 2 tbsp. creamy cashew butter
- 2 tbsp. almond milk
- 1/2 tsp. vanilla extract
- 1 tbsp. paleo chocolate chips
- 1/8 tsp. sea salt, to top
Instructions
- Preheat the oven to 350F and prepare a cookie sheet with a small square of parchment paper.
- In a small bowl, combine the almond flour, cocoa powder, monk fruit, and baking soda. Stir until well-combined.
- Add the cashew butter, almond milk, and vanilla extract to the almond flour mixture. Mix well until a thick cookie dough forms.
- Transfer the dough on to the prepared sheet of parchment paper. Form the dough into a smooth ball and press down slightly. Lightly press the chocolate chips into the top of the dough.
- Bake for 15 minutes. The top should be slightly cracked and the edges should be crispy.
- Garnish with sea salt and enjoy warm!
Notes
Depending on the consistency of the cashew butter used, more almond milk may need to be added to form the cookie dough. Add additional almond milk slowly in small amounts!
