Description

Thick, bakery style funfetti cookies made with healthier paleo, keto friendly ingredients! Perfectly sweet & soft with the vanilla cake-like flavor expected of a fun funfetti treat. Paleo, Refined-Sugar-Free, Keto Friendly, Grain-Free, Gluten-Free, Dairy-Free. 


Ingredients

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup granulated monk fruit sweetener
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp. sea salt
  • 1 egg
  • 1/4 cup coconut oil, melted
  • 1/4 cup creamy cashew butter
  • 2 tbsp. unsweetened almond milk
  • 1 tsp. pure vanilla extract
  • 2 tbsp. keto friendly rainbow sprinkles

Instructions

  1. Preheat the oven to 350F. Prepare a cookie sheet by either spraying it lightly with coconut oil or lining it with parchment paper. 
  2. Combine all of the ingredients together (besides the sprinkles) in a mixing bowl. Beat well with an electric hand mixer until a thick cookie dough forms and fold in the rainbow sprinkles. 
  3. Scoop the cookie dough onto the prepared baking sheet using an ice cream scoop to make about 12 evenly sized cookies. Roll lightly between the palms of your hands (cookies mostly retain their shape while baking). 
  4. Bake for 10-12 minutes, until the bottoms are slightly golden-brown. Let cool for about 5 minutes before removing from the cookie sheet & enjoy!
