Funfetti is without a doubt the most fun dessert flavor, I don’t think you can convince me otherwise! Not only are these funfetti cookies an easy crowd-pleaser, but they are also made with healthier paleo and keto friendly ingredients.
A Fun Healthier Cookie Recipe!
Although “healthier” is an adjective that can mean many different things depending on who you talk to, I stand on the ground that funfetti flavored desserts should be in the Mirium Webster definition of “fun”. I’ve been making this cookie recipe even before I ever started following the paleo diet when I was diagnosed with ulcerative colitis in 2020!

Not only are they ultra thick, perfectly soft healthier cookies but they’re also a tried-and-true favorite. In my mind funfetti is the perfect fun flavor without any crazy unexpected twists. There’s something about the simplicity of the sweet buttery vanilla of it all that brings me instant childhood birthday party nostalgia!
Sprinkles are not optional. Unless you’re desperate and absolutely have to go without the “fun”… in which case you are a party pooper for making “etti” cookies. Although the flavor will still be there, the rainbow sprinkles bring this recipe to life! Traditionally, sprinkles aren’t necessarily considered to be a healthier ingredient. Luckily, there has been an explosion of better-for-you sprinkle options launched recently! These sprinkles aren’t 100% “clean” per se but the ones linked on my Amazon storefront (linked below!) are sugar-free, synthetic dye free, and keto friendly. We’re doing what we can over here my friends!!
Low Sugar Baking
Lucky for us, there are so many incredible refined sugar alternatives available now in 2023 that have become common in nearly every grocery store! Refined sugar is known to be the culprit for our obesity epidemic and the current rise of global chronic disease prevalence. Because of this, switching out sugar for sugar-free ingredients in many of my recipes has taken priority!
All of my favorites are listed on my Amazon Shop page for your convenience, but a quick overview of some zero-sugar sweeteners I find myself going for frequently for low sugar baking include monk fruit, allulose, and stevia. Although these low sugar sweeteners are obviously also highly processed to become shelf-stable and easy to use in recipes, they are still so much better than refined white sugar in my humble opinion.
Especially for women, anyone looking to manage blood sugar, and anyone needing a therapeutic dietary approach to a neurological disorder a low sugar, high fat diet seems to be the way to go based on current research.

With that said, I’m definitely not a keto ambassador. Carbs and natural sugars from fruits and vegetables have their place in a balanced diet, especially for athletes or during periods of heightened mental stress. This study highlights the increased needs our brains have for glucose during these times, although too much was found to have a negative impact (as expected!).

- Electric Hand Mixer
- Almond Flour
- Coconut Flour
- Monk Fruit
- Almond Milk
- Coconut Oil
- Cashew Butter
- Vanilla Extract
- Keto Rainbow Sprinkles
How to Make Paleo Funfetti Cookies
Step 1: Preheat the oven and prepare a baking sheet with parchment paper. Combine the ingredients in a mixing bowl.
Step 2: Beat well with an electric hand mixer until a thick, cohesive cookie dough forms and fold in keto-friendly rainbow sprinkles.
Step 3: Scoop out cookie dough onto the prepared baking sheet in evenly-sized 2tbsp balls. Lightly roll each one between the palms of your hands to smooth (these cookies don’t really change shape while baking).
Step 4: Bake for 10-12 minutes, until the bottoms are slightly golden-brown. Let cool for 5 minutes before removing from the cookie sheet and enjoy!

Thick, bakery style funfetti cookies made with healthier paleo, keto friendly ingredients! Perfectly sweet & soft with the vanilla cake-like flavor expected of a fun funfetti treat. Paleo, Refined-Sugar-Free, Keto Friendly, Grain-Free, Gluten-Free, Dairy-Free.
Ingredients
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup granulated monk fruit sweetener
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp. sea salt
- 1 egg
- 1/4 cup coconut oil, melted
- 1/4 cup creamy cashew butter
- 2 tbsp. unsweetened almond milk
- 1 tsp. pure vanilla extract
- 2 tbsp. keto friendly rainbow sprinkles
Instructions
- Preheat the oven to 350F. Prepare a cookie sheet by either spraying it lightly with coconut oil or lining it with parchment paper.
- Combine all of the ingredients together (besides the sprinkles) in a mixing bowl. Beat well with an electric hand mixer until a thick cookie dough forms and fold in the rainbow sprinkles.
- Scoop the cookie dough onto the prepared baking sheet using an ice cream scoop to make about 12 evenly sized cookies. Roll lightly between the palms of your hands (cookies mostly retain their shape while baking).
- Bake for 10-12 minutes, until the bottoms are slightly golden-brown. Let cool for about 5 minutes before removing from the cookie sheet & enjoy!
