Description
Super fudgy, super dark, super delicious paleo brownie recipe! Made with wholesome ingredients, these brownies have a light sweetness from honey & are packed with rich chocolate flavor.
Ingredients
- 3/4 cup mashed ripe avocado (about 1 3/4 medium avocados)
- 2/3 cup unsweetened almond milk
- 1/3 cup unsweetened cocoa powder
- 1 egg
- 2 tbsp. honey
- 2 tbsp. creamy almond butter
- 2 tsp. vanilla extract
- 1 tsp. espresso powder
- 1 tsp. baking powder
- 1/4 tsp. sea salt
- 1/4 cup chocolate chips
Instructions
- Preheat the oven to 350F. Lightly coat a 9×9 glass baking tray with non-stick cooking spray.
- In a large bowl, combine all of the ingredients (except chocolate chips) and beat with an electric mixer until smooth & creamy.
- Stir in the chocolate chips.
- Pour the batter into the glass tray and bake for 25-30 minutes.
- Let cool for about 10 minutes before cutting & serving.
Notes
- I like my brownies slightly under-baked, so 25 minutes was perfect for my preferences. But if you enjoy the crispy edges, I would recommend baking for closer to 30min.
- I think these are best served with my specific-carbohydrate-diet-friendly caramel sauce since these brownies are very low in sugar on their own!
