fudgy flourless avocado brownies

My new favorite way to use up some ripe avocados: ultra-fudgy dark chocolate brownies ohhh yes. I’m 99% sure these would even fool the avocado haters out there… it’s like a decadent, under-baked version of the dark chocolate Ghirardelli brownie mix I used to adore!

Oh, did I forget to mention that they’re good for you too?! These brownies are absolutely packed with wholesome ingredients and healthy fats. To make it even better, you don’t even need flour for this recipe. I’ll be the first to admit that I’m notorious for using a whole bunch of unusual nut flours to bake with… so if you don’t happen to have walnut or pecan flour on hand, no problem!

Just grab one mixing bowl, some ripe avocados, cocoa powder, espresso powder, almond butter, an egg, vanilla, honey, almond milk, baking powder, & a love for chocolate (not optional) and you’re good to go!

I topped mine with my homemade scd-friendly “caramel” sauce to sweeten up the dark chocolate flavor. It’s only made with 5 simple ingredients! Click here for the recipe.

Step 1: Combine all of the ingredients in the same bowl & beat with an electric mixer until smooth.

Step 2: Stir in chocolate chips & pour into a 9×9 glass baking tray. I topped mine with a few more chocolate chips!

Step 3: Bake & devour!

Description

Super fudgy, super dark, super delicious paleo brownie recipe! Made with wholesome ingredients, these brownies have a light sweetness from honey & are packed with rich chocolate flavor.


Ingredients

Scale
  • 3/4 cup mashed ripe avocado (about 1 3/4 medium avocados)
  • 2/3 cup unsweetened almond milk
  • 1/3 cup unsweetened cocoa powder
  • 1 egg
  • 2 tbsp. honey
  • 2 tbsp. creamy almond butter
  • 2 tsp. vanilla extract
  • 1 tsp. espresso powder
  • 1 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350F. Lightly coat a 9×9 glass baking tray with non-stick cooking spray.
  2. In a large bowl, combine all of the ingredients (except chocolate chips) and beat with an electric mixer until smooth & creamy.
  3. Stir in the chocolate chips.
  4. Pour the batter into the glass tray and bake for 25-30 minutes.
  5. Let cool for about 10 minutes before cutting & serving.

Notes

  • I like my brownies slightly under-baked, so 25 minutes was perfect for my preferences. But if you enjoy the crispy edges, I would recommend baking for closer to 30min.
  • I think these are best served with my specific-carbohydrate-diet-friendly caramel sauce since these brownies are very low in sugar on their own!
