Ingredients
Truffle Center
- 3/4 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup monk fruit
- 1/2 cup creamy almond butter
- 3 tsp. instant coffee
- 2oz. 100% dark chocolate, melted (about 2tbsp)
- 2 tbsp. unsweetened almond milk
- 1 tsp. vanilla
- 1/4 cup cacao nibs
- 1/4 tsp. sea salt
Chocolate Coating
- 100g 100% dark chocolate bar
- 1 tsp. coconut oil
Instructions
- Combine all of the truffle ingredients (besides the 100% dark chocolate bar for the coating) in a large food processor.
- Pulse on High for 30-45 seconds until a uniform, slightly crumbly mixture forms.
- Use a tablespoon to scoop out evenly sized portions of the mixture. Roll each scoop lightly between the palms of your hands to create a smooth round truffle. This recipe should make about 24 truffles.
- Place the truffles in the freezer while you melt the 100% dark with the coconut oil on the stovetop or in the microwave. Let the chocolate cool down to be around room temperature.
- Dip each of the chilled chocolate truffle centers into the melted chocolate and sprinkle flakey sea salt over the truffles before the chocolate hardens.
- Chill for at least 10 more minutes to harden the chocolate more quickly & enjoy!
Notes
The cacao nibs are optional, but I like the texture they add! Chopped pecans, coconut flakes, and freeze-dried fruit can be substituted.
