Espresso Chocolate Truffles (Paleo, Keto-Friendly)

Description

Decadent dark chocolate truffles with a hint of espresso & a rich, creamy chocolate center. What makes it even better: these truffles are made with nourishing, low sugar ingredients for the perfect treat! Paleo, Keto-Friendly, Refined-Sugar-Free, Grain-Free, Gluten-Free, No-Bake. 


Ingredients

Truffle Center

  • 3/4 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup monk fruit
  • 1/2 cup creamy almond butter
  • 3 tsp. instant coffee
  • 2oz. 100% dark chocolate, melted (about 2tbsp
  • 2 tbsp. unsweetened almond milk
  • 1 tsp. vanilla
  • 1/4 cup cacao nibs
  • 1/4 tsp. sea salt

Chocolate Coating

  • 100g 100% dark chocolate bar
  • 1 tsp. coconut oil

Instructions

  1. Combine all of the truffle ingredients (besides the 100% dark chocolate bar for the coating) in a large food processor. 
  2. Pulse on High for 30-45 seconds until a uniform, slightly crumbly mixture forms. 
  3. Use a tablespoon to scoop out evenly sized portions of the mixture. Roll each scoop lightly between the palms of your hands to create a smooth round truffle. This recipe should make about 24 truffles. 
  4. Place the truffles in the freezer while you melt the 100% dark with the coconut oil on the stovetop or in the microwave. Let the chocolate cool down to be around room temperature. 
  5. Dip each of the chilled chocolate truffle centers into the melted chocolate and sprinkle flakey sea salt over the truffles before the chocolate hardens. 
  6. Chill for at least 10 more minutes to harden the chocolate more quickly & enjoy!

Notes

The cacao nibs are optional, but I like the texture they add! Chopped pecans, coconut flakes, and freeze-dried fruit can be substituted.
