I don’t know about you, but it’s pretty much an unspoken rule in my life to require chocolate with my coffee in the morning. If I had to choose one flavor combination for the rest of my life, it would be espresso & chocolate!

These espresso chocolate truffles have quickly become one of my favorite chocolate treats to have stashed in my refrigerator when my sweet tooth kicks in.
This espresso chocolate recipe is also perfect for Valentines Day (hint hint wink wink). If you made these for your significant other, I promise you’ll get a ton of brownie points. It only takes 10 minutes to make and can stay fresh in the freezer for months! Which means you don’t need to make time and scramble to prepare this espresso chocolate truffle recipe the day of. A Decadent Keto-Friendly Dessert
“Keto” and “dessert” may be two words that seem to contradict on the surface, but I promise these truly taste like a treat. There are so many fun new keto-friendly sweeteners on the market right now that don’t get metabolized like sugar does in our bodies. This keto-friendly espresso chocolate truffle recipe uses monk fruit to give this dessert a perfect sweet backdrop to the rich chocolate & roasted espresso notes!
Monk fruit has become one of my favorite keto-friendly sugar substitutes for baking. Since it tastes 150-200 times sweeter than regular sugar, I don’t need to use as much. This helps create a smooth, creamy truffle texture since the grittiness of sugar or granulated monk fruit sweetener doesn’t get in the way These decadent truffles are truly the best keto-friendly low sugar dessert.
Paleo Chocolate Truffles
Chocolate truffles (not to be confused with the savory umami fungi, which I also love more than I should) are defined to be a type of confectionary that have a creamy, smooth chocolate ganache center & coated in a tempered chocolate coating. Although traditional chocolate truffles are made with cream, butter, and sugar my paleo chocolate truffles switch each of these out for… you guessed it: paleo ingredients!
Instead of using cream and butter for this chocolate truffle recipe, I used a blend of creamy almond butter and melted 100% unsweetened dark chocolate to create the perfect creamy consistency. As I mentioned earlier, monk fruit is not only keto-friendly but its also generally regarded to be a paleo approved. So monk fruit was an easy choice to swap out the refined sugar for in this paleo chocolate truffle recipe.
What You’ll Need:
- 9 Quart Food Processor
- Parchment Paper
- Almond flour
- Unsweetened Cocoa Powder
- Monk Fruit
- Creamy Almond Butter
- Espresso Powder
- 100% dark chocolate
- Almond Milk
- Pure Vanilla Extract
- Cacao Nibs
- Sea Salt
How to Make Paleo Truffles
Step 1: Combine all of the ingredients together (except for the chocolate used for the coating) in a large food processor.
Step 2: Pulse on high for 30-45 seconds until a slightly crumbly uniform mixture forms.
Step 3: Use a tablespoon to scoop out evenly sized portions of the chocolate truffle mixture. Roll each one lightly between the palms of your hands to form a smooth ball. This chocolate paleo truffle recipe should make about 24 truffles.
Step 4: Place the truffles in the freezer for about 10 minutes while you melt the 100% chocolate bar for the chocolate coating. Carefully dip each chilled truffle in the melted chocolate and set aside on a sheet of parchment paper. Sprinkle each one with more flakey sea salt before the chocolate hardens.
Step 5: Place them in the freezer for at least 10 more minutes to help the chocolate shell harden more quickly & enjoy!

Ingredients
Truffle Center
- 3/4 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup monk fruit
- 1/2 cup creamy almond butter
- 3 tsp. instant coffee
- 2oz. 100% dark chocolate, melted (about 2tbsp)
- 2 tbsp. unsweetened almond milk
- 1 tsp. vanilla
- 1/4 cup cacao nibs
- 1/4 tsp. sea salt
Chocolate Coating
- 100g 100% dark chocolate bar
- 1 tsp. coconut oil
Instructions
- Combine all of the truffle ingredients (besides the 100% dark chocolate bar for the coating) in a large food processor.
- Pulse on High for 30-45 seconds until a uniform, slightly crumbly mixture forms.
- Use a tablespoon to scoop out evenly sized portions of the mixture. Roll each scoop lightly between the palms of your hands to create a smooth round truffle. This recipe should make about 24 truffles.
- Place the truffles in the freezer while you melt the 100% dark with the coconut oil on the stovetop or in the microwave. Let the chocolate cool down to be around room temperature.
- Dip each of the chilled chocolate truffle centers into the melted chocolate and sprinkle flakey sea salt over the truffles before the chocolate hardens.
- Chill for at least 10 more minutes to harden the chocolate more quickly & enjoy!
Notes
The cacao nibs are optional, but I like the texture they add! Chopped pecans, coconut flakes, and freeze-dried fruit can be substituted.
