Ingredients
- 2/3 cup gluten-free old fashioned oats
- 1/2 cup unflavored collagen peptides
- 1/3 cup granulated monk fruit sweetener
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/3 cup creamy cashew butter
- 1/4 cup coconut butter
- 1/4 cup pure maple syrup
- 1/4 cup liquid allulose
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/4 tsp. sea salt
- 50 grams (1/2 large bar) 100% unsweetened bakers chocolate
Instructions
- Lightly pulse the old fashioned oats in a food processor until they have the texture of instant oats. Combine the oats with the coconut flour, monk fruit, collagen, shredded coconut, cinnamon, and sea salt. Stir well.
- Add in the cashew butter, coconut butter, maple syrup, allulose, and vanilla extract. Beat well until a slightly crumbly mixture forms.
- Line a loaf tin with a sheet of parchment paper. Transfer the collagen bar mixture to the lined loaf tin and press down evenly using your hands.
- Freeze the bars for at least one hour before slicing into 6 even protein bars.
- Melt the dark chocolate with about a teaspoon of coconut oil or avocado oil on the stovetop or in the microwave. Drizzle the melted chocolate over the bars, finish with a dash of sea salt, and enjoy! Store leftover bars in the refrigerator.
