Delicious homemade protein bars with the perfect coconut cookie flavor, dark chocolate drizzle, and chewy gluten-free oats packed with healthy fats and collagen protein to keep you energized for hours! Gluten-Free, Refined-Sugar-Free, Dairy-free, Soy-free, No-Bake.


Ingredients

  • 2/3 cup gluten-free old fashioned oats
  • 1/2 cup unflavored collagen peptides
  • 1/3 cup granulated monk fruit sweetener
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup creamy cashew butter
  • 1/4 cup coconut butter
  • 1/4 cup pure maple syrup
  • 1/4 cup liquid allulose
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. sea salt
  • 50 grams (1/2 large bar) 100% unsweetened bakers chocolate

Instructions

  1. Lightly pulse the old fashioned oats in a food processor until they have the texture of instant oats. Combine the oats with the coconut flour, monk fruit, collagen, shredded coconut, cinnamon, and sea salt. Stir well.
  2. Add in the cashew butter, coconut butter, maple syrup, allulose, and vanilla extract. Beat well until a slightly crumbly mixture forms.
  3. Line a loaf tin with a sheet of parchment paper. Transfer the collagen bar mixture to the lined loaf tin and press down evenly using your hands.
  4. Freeze the bars for at least one hour before slicing into 6 even protein bars.
  5. Melt the dark chocolate with about a teaspoon of coconut oil or avocado oil on the stovetop or in the microwave. Drizzle the melted chocolate over the bars, finish with a dash of sea salt, and enjoy! Store leftover bars in the refrigerator.
