Coconut Cookie Collagen Bars (Gluten-Free, Refined-Sugar-Free)

The Perfect Homemade Protein Bar

Not only are these coconut cookie collagen bars super easy to make but they might even taste better than any packaged protein bars out there! This recipe has the perfect blend of coconut and chocolate with the perfect chewy texture from shredded coconut, gluten-free rolled oats, and cashew butter.

This coconut cookie flavor was initially inspired by my old favorite protein bar in high school. I couldn’t go a day without a Chocolate Dipped Coconut Luna Bar for my junior year! With that said, these homemade protein bar recipe might be arguably better though. Not only in terms of better-for-you ingredients but also flavor. The difference between homemade and store-bought snacks is definitely noticeable, no matter what it is!

This coconut cookie collagen bar recipe has the perfect tropical coconut flavor with a delicious dark chocolate drizzle and hint of vanilla and cinnamon to bring home the “cookie” flavor! Cashew butter also slightly shines though to bring the protein bars a well-rounded creamy, nutty, salty finish. The best part about these is not even tasting the protein! Collagen peptides (unlike whey, casein, etc) don’t have any weird aftertastes or gritty texture so these coconut cookie bars truly taste like a delicious sweet dessert.

Why Collagen?

Collagen peptides were the new cool kid on the block on every social media health platform circa 2017. While I’m skeptical of most trends, I’d have to say that collagen powders might just be worth the hype! Not only does collagen peptide powder seamlessly incorporate into so many different recipes, my morning coffee, and even simply plain water but it also has so many incredible health benefits.

Although collagen is not an essential protein (aka our bodies can make it by themselves), it still has so many incredible health implications. Especially since our native collagen production decreases as we get older, it’s important to start supplementing with extra collagen protein.

What You’ll Need

  • Loaf tin
  • Parchment paper
  • Electric Hand Mixer (or a lot of patience)
  • Gluten-Free Oats
  • Coconut Flour
  • Collagen Peptides (Unflavored)
  • Pure Maple Syrup
  • Liquid Allulose
  • Monk Fruit
  • Unsweetened Shredded Coconut
  • Cashew Butter
  • Coconut Butter
  • Cinnamon
  • Sea salt
  • 100% Dark Chocolate

How to Make Coconut Collagen Bars

Step 1: Lightly pulse the gluten-free old fashioned oats in a food processor, just enough to reach the right “intent oats” consistency. Combine the oats with the coconut flour, collagen, monk fruit, shredded coconut, cinnamon, and sea salt in a mixing bowl. Stir well until well combined.

Step 2: Add the coconut butter, cashew butter, maple syrup, allulose, and vanilla to the dry ingredients and beat well until a slightly crumbly dough mixture forms.

Step 3: Press the coconut collagen bar mixture into a loaf tin lined with parchment paper with your hands. Freeze for at least 1 hour.

Step 4: Slice into 6 even bars while still cold. Melt the dark chocolate with a teaspoon of coconut oil or avocado oil. Drizzle the dark chocolate over the bars and sprinkle with sea salt. Store all leftover bars in the refrigerator.

Description

Delicious homemade protein bars with the perfect coconut cookie flavor, dark chocolate drizzle, and chewy gluten-free oats packed with healthy fats and collagen protein to keep you energized for hours! Gluten-Free, Refined-Sugar-Free, Dairy-free, Soy-free, No-Bake.


Ingredients

Scale
  • 2/3 cup gluten-free old fashioned oats
  • 1/2 cup unflavored collagen peptides
  • 1/3 cup granulated monk fruit sweetener
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup creamy cashew butter
  • 1/4 cup coconut butter
  • 1/4 cup pure maple syrup
  • 1/4 cup liquid allulose
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. sea salt
  • 50 grams (1/2 large bar) 100% unsweetened bakers chocolate

Instructions

  1. Lightly pulse the old fashioned oats in a food processor until they have the texture of instant oats. Combine the oats with the coconut flour, monk fruit, collagen, shredded coconut, cinnamon, and sea salt. Stir well.
  2. Add in the cashew butter, coconut butter, maple syrup, allulose, and vanilla extract. Beat well until a slightly crumbly mixture forms.
  3. Line a loaf tin with a sheet of parchment paper. Transfer the collagen bar mixture to the lined loaf tin and press down evenly using your hands.
  4. Freeze the bars for at least one hour before slicing into 6 even protein bars.
  5. Melt the dark chocolate with about a teaspoon of coconut oil or avocado oil on the stovetop or in the microwave. Drizzle the melted chocolate over the bars, finish with a dash of sea salt, and enjoy! Store leftover bars in the refrigerator.
