Classic Paleo Almond Butter Chocolate Chip Cookies

Description

The BEST grain-free soft & chewy chocolate chip cookie recipe! Perfectly soft in the middle and golden brown on the outside, sweetened with only natural honey. Grain-free, dairy-free, SCD-friendly, refined-sugar-free, paleo.

Instructions

  1. Preheat the oven to 350F. Lightly grease a cookie sheet with cooking spray (I use either avocado or coconut oil sprays) and set aside. 
  2. In a large bowl, combine the cashew flour, salt, and baking soda. Stir and set aside.
  3. Combine the almond butter, eggs, honey, and vanilla in a separate medium-sized bowl. Beat well with an electric handheld mixer until smooth. Pour the almond butter mixture into the bowl with the flour mixture and beat again just until a thick dough forms. 
  4. Stir in the chocolate chips and scoop the dough on to the cookie sheet with a cookie scoop
  5. Bake for 8-10 minutes, until the edges are slightly golden brown. Let the cookies cool on the pan for 2-3 minutes before transferring to a wire rack to finish cooling. 

Notes

Honey can be substituted for maple syrup.

Cashew flour can be substituted for almond flour.
