Description
A sweet, creamy cashew spread with a fun cinnamon roll inspired flavor! This healthier sweet spread only has 6 simple paleo ingredients and is super easy to make. Paleo, SCD-friendly, refined-sugar-free, grain-free, gluten-free, dairy free.
Ingredients
- 1 cup cashew halves
- 1/3 cup unsweetened almond milk
- 1 tbsp. coconut oil, melted
- 1 tbsp. monkfruit
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
Cinnamon Swirl:
- 1/2 tbsp coconut oil, softened
- 1 tsp. cinnamon
- 1/2 tsp. vanilla extract
Instructions
- Soak the cashew halves in very hot water for at least 30 minutes.
- Drain and rinse the cashews. Transfer the soaked cashews into a food processor with the almond milk, coconut oil, monkfruit, vanilla, and cinnamon.
- Blend on high until the mixture is smooth, about 3- 5 minutes.
- Transfer the spread into a serving dish and chill for at least 1 hour before serving (or place in the freezer for 15-20 minutes). Serve cold for the best texture!
- (Optional) For the cinnamon swirl on top: stir the softened coconut oil, cinnamon, and vanilla in a small dish. Use a toothpick to make the decorative swirl on top with this cinnamon mixture.
