Soft and chewy snickerdoodle cookies made with cauliflower! This healthier cookie recipe is the perfect high-fiber, low-sugar treat to have on hand for busy weeks. Grain-free, Gluten-free, Refined-sugar-free, Low Carb, High Fiber, Dairy-Free.
Ingredients
- 1/2 cup cauliflower flour
- 3/4 cup almond flour
- 2/3 cup monk fruit granulated sweetener
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1/4 cup coconut oil, melted
- 2 tbsp. unsweetened almond milk
- 2 eggs
- 1 tsp. vanilla extract
Cinnamon Sugar Mixture:
- 1 tbsp. cinnamon
- 1/3 cup monkfruit
Coconut Butter Glaze:
- 1/4 cup coconut butter
- 2 tbsp. coconut oil
Instructions
- Preheat the oven to 350F and line a large cookie sheet with parchment paper.
- Combine the cauliflower flour, almond flour, monk fruit, cinnamon, salt, baking powder, and baking soda in a large mixing bowl and stir.
- Add the melted coconut oil, almond milk, eggs, and vanilla to the flour mixture. Beat well with an electric hand mixer until a thick cookie dough forms.
- Scoop out 1 tablespoon of dough at a time, rolling each ball lightly between the palms of your hands to smooth.
- Combine the cinnamon and monkfruit for the “cinnamon sugar” mixture in a separate small dish.
- Toss each ball of cookie dough in the cinnamon sugar mixture. Place each ball of cookie dough on the prepared baking sheet and press down each ball to slightly flatten.
- Bake for 8-10 minutes.
- For the optional coconut butter glaze, combine the coconut butter and coconut oil in a microwave-safe dish. Microwave on high until melted (about 45 seconds) and stir well. Drizzle over the baked cookies to serve.
