Description

Soft and chewy snickerdoodle cookies made with cauliflower! This healthier cookie recipe is the perfect high-fiber, low-sugar treat to have on hand for busy weeks. Grain-free, Gluten-free, Refined-sugar-free, Low Carb, High Fiber, Dairy-Free. 


Ingredients

Scale
  • 1/2 cup cauliflower flour
  • 3/4 cup almond flour
  • 2/3 cup monk fruit granulated sweetener
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1/4 cup coconut oil, melted 
  • 2 tbsp. unsweetened almond milk
  • 2 eggs
  • 1 tsp. vanilla extract

Cinnamon Sugar Mixture: 

  • 1 tbsp. cinnamon
  • 1/3 cup monkfruit

Coconut Butter Glaze: 

  • 1/4 cup coconut butter
  • 2 tbsp. coconut oil

Instructions

  1. Preheat the oven to 350F and line a large cookie sheet with parchment paper. 
  2. Combine the cauliflower flour, almond flour, monk fruit, cinnamon, salt, baking powder, and baking soda in a large mixing bowl and stir. 
  3. Add the melted coconut oil, almond milk, eggs, and vanilla to the flour mixture. Beat well with an electric hand mixer until a thick cookie dough forms. 
  4. Scoop out 1 tablespoon of dough at a time, rolling each ball lightly between the palms of your hands to smooth. 
  5. Combine the cinnamon and monkfruit for the “cinnamon sugar” mixture in a separate small dish. 
  6. Toss each ball of cookie dough in the cinnamon sugar mixture. Place each ball of cookie dough on the prepared baking sheet and press down each ball to slightly flatten. 
  7. Bake for 8-10 minutes. 
  8. For the optional coconut butter glaze, combine the coconut butter and coconut oil in a microwave-safe dish. Microwave on high until melted (about 45 seconds) and stir well. Drizzle over the baked cookies to serve.
