Grain-free cauliflower snickerdoodle cookies

With that said, these soft chewy snickerdoodles somehow work magic disguising cauliflower! By using a blend of naturally sweet chickpea flour with cauliflower flour (yes, that’s a widely available thing now… thanks 2022) it’s easily incorporated in this sweet snickerdoodle recipe.

Grain-Free Snickerdoodles

Since I started following a grain-free, paleo-style diet to manage my ulcerative colitis symptoms I’m always on the hunt for fun new grain-free flours to bake with. When I saw cauliflower flour at Walmart, I couldn’t resist picking it up to experiment. Obviously, I started trying to make savory recipes like homemade crackers and dinner rolls. Since none of these recipes hit the spot for me, I thought cookies might be worth a try.

Turns out, cauliflower flour lends itself perfectly to a cookie. It’s slightly too dense to be easily incorporated into a bread, and it wouldn’t hold up strongly enough to be a cracker either. For reference, it’s a very very finely ground flour with a fairly high fiber content.

I have a much stronger sweet tooth anyways so it almost doesn’t surprise me that I loved these snickerdoodles more than the other savory recipes I’ve tried to create in the past. These grain-free, low sugar snickerdoodles are also the perfect healthier sweet treat to ease into healthy eating again after the holidays! I always like to stash a few in the freezer for busy grad school weeks.

I love eating these snickerdoodles warmed up with a mug of coffee for an afternoon pick-me-up.

What You’ll Need:

How to Make Cauliflower Snickerdoodles

Step 1: Combine all of the dry ingredients together and stir well.

Step 2: Add the “wet” ingredients and beat well with an electric hand mixer until a thick cookie dough forms.

Step 3: Scoop out tablespoon-sized balls of dough. Roll each ball lightly between the palms of your hands to smooth. Make the cinnamon-monkfruit “cinnamon sugar” mixture in a separate small bowl. Toss each ball of dough in the cinnamon mixture and form each ball into a cookie-like shape before placing them on a baking sheet lined with parchment paper.

Step 4: Bake for 10-12 minutes. Drizzle with a melted coconut butter glaze (optional but I DEFINITELY recommend)!

Description

Soft and chewy snickerdoodle cookies made with cauliflower! This healthier cookie recipe is the perfect high-fiber, low-sugar treat to have on hand for busy weeks. Grain-free, Gluten-free, Refined-sugar-free, Low Carb, High Fiber, Dairy-Free. 


Ingredients

Scale
  • 1/2 cup cauliflower flour
  • 3/4 cup almond flour
  • 2/3 cup monk fruit granulated sweetener
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1/4 cup coconut oil, melted 
  • 2 tbsp. unsweetened almond milk
  • 2 eggs
  • 1 tsp. vanilla extract

Cinnamon Sugar Mixture: 

  • 1 tbsp. cinnamon
  • 1/3 cup monkfruit

Coconut Butter Glaze: 

  • 1/4 cup coconut butter
  • 2 tbsp. coconut oil

Instructions

  1. Preheat the oven to 350F and line a large cookie sheet with parchment paper. 
  2. Combine the cauliflower flour, almond flour, monk fruit, cinnamon, salt, baking powder, and baking soda in a large mixing bowl and stir. 
  3. Add the melted coconut oil, almond milk, eggs, and vanilla to the flour mixture. Beat well with an electric hand mixer until a thick cookie dough forms. 
  4. Scoop out 1 tablespoon of dough at a time, rolling each ball lightly between the palms of your hands to smooth. 
  5. Combine the cinnamon and monkfruit for the “cinnamon sugar” mixture in a separate small dish. 
  6. Toss each ball of cookie dough in the cinnamon sugar mixture. Place each ball of cookie dough on the prepared baking sheet and press down each ball to slightly flatten. 
  7. Bake for 8-10 minutes. 
  8. For the optional coconut butter glaze, combine the coconut butter and coconut oil in a microwave-safe dish. Microwave on high until melted (about 45 seconds) and stir well. Drizzle over the baked cookies to serve.
