A Healthier Paleo Dessert Recipe
This healthier paleo dessert is one of my absolute favorites. Blueberries and pecans are a match made in heaven, and they pair together perfectly in a warm cookie! The cookie itself has a slight hint of cinnamon that bridges the nutty flavors with the sweet berries seamlessly.
Since these blueberry pecan cookie bars are made with ingredients like almond flour, coconut oil, and honey they are not only delicious but also healthier and more nourishing than the average traditional cookie bar. Ever since I started creating healthier paleo desserts to help manage a few autoimmune diseases I was diagnosed with back in 2020, I’ll never go back!
This blueberry pecan cookie bar recipe tastes just as good as the cookie bars I grew up with made with refined flour, cane sugar, and vegetable oils. The only difference is how great I feel after eating these cookie bars compared to those. Since this healthier paleo recipe is made without any refined sugar of gluten, I never get a sugar crash or bloating/food coma from these cookie bars like I used to with my grandma’s traditional cookie bar recipe.
Small-Batch Baking
Recently, I’ve been loving small-batch or single-serve recipes. One thing about me: I’m not a big leftover girl and I tend to get bored pretty easily. With that said, I’ve learned how to adapt most of my favorite recipes to make smaller batches than normal.
Small-batch recipes take way less time to make, way less time to clean up, and much less leftover servings to store! Especially when it comes to fresh, paleo-based ingredients most of these recipes have to be stored in the refrigerator or freezer to stay fresh. Since I live with roommates most of the year while I’m at grad school, we have veryyy limited fridge/freezer space so these small-batch treats are my go-to!
The best part about these small-batch blueberry pecan blondies is that you can easily double the recipe if you’re baking for a party! This recipe originally makes 8 blondies, but can be doubled to make 16 in an 8×8″ pan.
What You’ll Need
- Loaf tin
- Electric hand mixer
- Almond Flour
- Coconut Flour
- Coconut Oil
- Cashew Butter
- Honey
- Chopped Pecans
- Dried Wild Blueberries
How to Make Blueberry Pecan Blondies
Step 1: Preheat the oven and lightly grease a loaf tin with coconut oil. Combine all of the ingredients together (besides the wild blueberries and chopped pecans) in a mixing bowl.
Step 2: Beat well with an electric hand mixer until a thick cookie dough forms. Then stir in the wild blueberries and chopped pecans.
Step 3: Press the cookie dough into the lightly greased loaf tin with your hands.
Step 4: Bake for 15 minutes, until the edges are slightly golden-brown. Enjoy warm or store in the fridge for later!

Ingredients
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1 tsp. baking powder
- 1/4 tsp. sea salt
- 1/2 tsp. cinnamon
- 2 tbsp coconut butter, melted
- 2 tbsp creamy cashew butter
- 2 tbsp. honey
- 2 tbsp. unsweetened almond milk
- 1 egg
- 1 tsp. vanilla extract
- 1/4 cup chopped pecans
- 1/4 cup dried wild blueberries
Instructions
- Preheat the oven to 350F and prepare a loaf tin by lightly greasing it with coconut oil.
- Combine all of the ingredients (besides the chopped pecans and wild blueberries) and beat well with an electric hand mixer until a thick cookie dough forms.
- Stir in the chopped pecans and dried blueberries and evenly press the cookie dough the prepared loaf tin with your hands.
- Bake for 15 minutes or until the edges are slightly golden-brown. Let the cookie bars cool completely before slicing and serve warm!
