Description

Perfectly sweet vanilla birthday cake flavored collagen bars with the texture of cookie dough & riddled with chewy gluten-free oats, keto rainbow sprinkles, and collagen protein. This healthy refined-sugar-free recipe has become a go-to healthy snack of mine. Refined-Sugar-Free, Gluten-Free, Dairy-Free, Soy-Free, No-Bake. 


Ingredients

  • 2/3 cup gluten-free old fashioned oats
  • 1/2 cup unflavored collagen peptides
  • 1/3 cup granulated monk fruit sweetener
  • 1/4 cup coconut flour
  • 1/3 cup creamy cashew butter
  • 1/4 cup coconut butter
  • 3 tbsp. pure maple syrup
  • 1/4 cup liquid allulose
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. sea salt
  • 2 tbsp keto-friendly rainbow sprinkles

Instructions

  1. Pulse the old fashioned oats in the food processor for about 10-15 seconds to slightly reduce the size. 
  2. Add in the remaining ingredients (besides the rainbow sprinkles) and blend on high for about 45 seconds, until a thick, cohesive mixture forms. 
  3. Transfer the collagen bar mixture to a loaf tin lined with parchment paper. Evenly press the mixture into the lined loaf tin with your hands. 
  4. Sprinkle the rainbow sprinkles over the surface of the collagen bars and lightly press them into the top. 
  5. Freeze for at least 30 minutes before slicing and serving. Enjoy right away or store leftovers in the fridge!
