Description
Perfectly sweet vanilla birthday cake flavored collagen bars with the texture of cookie dough & riddled with chewy gluten-free oats, keto rainbow sprinkles, and collagen protein. Ingredients
- 2/3 cup gluten-free old fashioned oats
- 1/2 cup unflavored collagen peptides
- 1/3 cup granulated monk fruit sweetener
- 1/4 cup coconut flour
- 1/3 cup creamy cashew butter
- 1/4 cup coconut butter
- 3 tbsp. pure maple syrup
- 1/4 cup liquid allulose
- 1 tsp. pure vanilla extract
- 1/4 tsp. sea salt
- 2 tbsp keto-friendly rainbow sprinkles
Instructions
- Pulse the old fashioned oats in the food processor for about 10-15 seconds to slightly reduce the size.
- Add in the remaining ingredients (besides the rainbow sprinkles) and blend on high for about 45 seconds, until a thick, cohesive mixture forms.
- Transfer the collagen bar mixture to a loaf tin lined with parchment paper. Evenly press the mixture into the lined loaf tin with your hands.
- Sprinkle the rainbow sprinkles over the surface of the collagen bars and lightly press them into the top.
- Freeze for at least 30 minutes before slicing and serving. Enjoy right away or store leftovers in the fridge!
